Maxwell Honey Mead

Maxwell Honey Mead is made by fermenting pure South Australian honey, using one of the oldest recipes. It has light beewax mixed with cooked citrus aromas on the nose and hints of floral and apricot on the palate with a clean finish. Best serve chilled over ice or as a mixers to enhance the experience.

Maxwell Spiced Mead

Displays a bouquet of honey and citrus, plus an added zest of cinnamon and cloves. These spicy characters are carried through on the palate, filling the mouth with a complex and satisfying array of flavours. Traditionally served hot (not boiling) to enhance its aromas and warm the soul.

Quinta do Noval LBV Unfiltered

Treated exactly like a Vintage Port with only noble grape varieties from the Quinta, trodden by foot and unfiltered. The difference is that it is aged for four years in wooden vats instead of the two years typical of Vintage Ports. Fine structured tannins, great freshness and purity of fruit. It's lushly textured with vibrant notes of cherries and blackcurrant and comes with a delicious figgy richness. Darkly potent, beautifully balanced with great acidity and a lingering, chocolaty finish.

Equipo Navazos I Think Manzanilla Saca TBC ( )

15% ABV. From the stellar Equipo Navazos stable, this Manzanilla comes from a 60-strong cask selection made by Navazos founders Jesus Barquín and Eduardo Ojeda that was plucked from the production of La Guita, one of the most famous (and finest) Manzanilla producers (and where Ojeda oversees production in his role as the technical director of José Estévez). As always, this current bottling was drawn from its barrels en rama (directly). This is how Manzanilla used to be bottled before sterile filtering became the standard in Jerez. The current batch was bottled in March 2024. It’s a wonderfully potent and briny yet seductive wine with a deep, silky texture and plenty of sustained, tangy drive. Four and a half years under flor and gentle bottling direct from cask has also delivered a vibrant orange/gold colour and some nutty development. It’s a much deeper colour than most other Manzanillas on the market (which are typically very clear due to their youth and sterile filtration). That makes this unique in comparison to other Manzanillas in its price range. It remains light years ahead of more common, conventional Manzanillas.

Fortified wines were perfected in the 1700s and were popular as they were able to withstand long sea journeys. A wine becomes fortified when a neutral spirit is added during the fermentation process. There are many different types of fortified wines including Tawny, Port, Apera, Sherry, Muscat and other fortifieds. Common flavours include ginger, toasted hazelnuts, raisins, caramel and cinnamon. Fortified wine pairs well with seafood, tapas, fruit cake or enjoyed as a cocktail, aperitif or digestive. A dry style Sherry perfect for the kitchen or as a pre-dinner starter. An excellent match to your favourite soup.
