Product Information: Salon's newly released 2013 Blanc de Blancs comes from a challenging growing season that is emerging, at least with respect to the region's top cuvées, as one of the most underestimated vintages of the last 15 years. With a dosage just 5.5 grams per litre, the 2013 Brut Blanc de Blancs Le Mesnil possesses a complex, fruity bouquet mingling aromas of orchard fruit with notions of lemon oil, exotic fruits, spring flowers, almond and hints of menthol and buttery pastry. It's full-bodied, rich and dense, with lively acids. Maker: Salon champagne stands apart as something truly special, shaped by its distinctive terroir and grape variety. It comes from the Côte des Blancs, from the singular cru of Le Mesnil-sur-Oger, crafted solely from Chardonnay grapes harvested in exceptional years and is of one man's vision Eugène-Aimé Salon. The first vintage of Champagne Salon was 1905 by the hands of Eugène-Aimé Salon, a remarkable man with unwavering ambition. In love with champagne and captivated by the terroir of Le Mesnil, Eugène-Aimé Salon created a Blanc de Blancs Champagne. Initially it was only for his personal pleasure – but by 1920s he began to share his passion with the rest of the world. Champagne Salon comes from a single hectare plot called 'the Salon garden' and nineteen other small plots in Le Mesnil-sur-Oger selected by Eugène-Aimé Salon at the beginning of the 20th century. The wines are aged in cellar for an average of ten years, after which they finally start to reveal their complexity and finesse. The fact that Salon still conserves bottles in its cellars from nearly every vintage is testament to its legacy. To demonstrate how rare these wines are, just 37 vintages were produced in the 20th century, a unique phenomenon in the world of wine. Vineyard: 2013 is a cool, late-ripening vintage in Champagne, hallmarked by October harvest in cool but sunny conditions. Despite a challenging growing season for some producers, this is a superb Salon with a long, resonant finish. After a cold winter, budbreak was relatively late. The weather was rainy throughout the spring, followed by hail episodes in the Côte des Bar, in Vallée de la Marne and in Côte des Blancs, notably in Epernay. In mid-July, the weather turned hot, sunny and dry until early September. Unfortunately, the rains returned until the end of the month, causing damage and precipitating a virulent attack of gray rot (botrytis) in some locations. Harvest took place at the beginning of October. The houses that managed to contain the attacks of gray rot and to pick the grapes during the mild days of October succeeded in making excellent wines with a classic, chiseled profile that has become only too rare in the interim. Nose - Browned Pastry, Orange Cream, Floral Honey Orange cream, floral honey and lemon peel, backed up with delicate browned pastry, milky oyster and nut oil complexity that speaks of the long lees ageing. Palate - Creamy, Fine Mousse, Salty Edge Full-bodied, rich and dense, with lively acids, notably complex and incisive. Finish - Taut, Lemon Peel, Chalky Fine mousse with a savoury/salty edge freshening up the finish.
Domaine Christian Moreau Père Et Fils Chablis Vaillon 1er Cru Cuvee Guy Moreau
Product Information: In recent years, this wine has displayed even greater definition and class. With organic viticulture, new equipment, and nearly 20 years of expertise, Fabien Moreau is producing exceptional wines, and the 2023 1er Cru Chablis is looking spectacular. The Vaillon stands out above the village-level crus, with elevated floral notes, energetic citrus, and beeswax emerging with aeration. The palate is nicely balanced, opening with a touch of honey, vivid fruit, and a racy acidity that lingers on the finish. The Vaillon appellation is located on the left bank of Chablis. Domaine Christian Moreau has six parcels totaling 4.7 hectares in the historical heart of Vaillons. The fruit is sourced from vines that are 30 to 70+ years old, all south/south-east-facing. The soil here is from the Kimmeridgian period, rich in clay-limestone marls with marine fossils, specifically small oyster fossils known as Exogyra Virgula. The fruit is hand-harvested, fermented with natural yeast, and aged for 6-8 months—two-thirds in tank and one-third in barrique. Two wines are produced from those vines: our Premier Cru Vaillon, blending of five different parcels which average age is from 37 to 74 years old – and our Premier Cru Vaillon, Cuvée Guy Moreau issued from a parcel of 1 ha where the vines were planted in 1933 by Guy Moreau, Christian’s father. Pierro Fire Gully Chardonnay
Fire Gully wines are produced by the team at Pierro. Pierro was the original high-density vineyard planting in Margaret River and also one of the first in Australia. Vine density ranges from 4,000 to 5,500 vines per hectare, compared to a conventional Australian vineyard of 1,900 per hectare. This was to make the vines more competitive, balance their fruit yield and promote flavour intensity. The soils are moderately deep laterite gravel with interspersed granite, over ancient base rock with friable pink clay merging into a shattered rock layer. These granite soils are some of the most open, warm and well drained of our viticultural soils, allowing great root penetration and exploration. Pierro wine is a wonderfully complex balance of sensual and fascinating elements. In a world where mediocrity can become a pervasive norm, the wines of Pierro are a shining exception. The Fire Gully Farm & Vineyard is located in the heart of Willyabrup, Margaret River. Thanks to old vines, ancient gravelly loam soils, vine age, regenerative farming practices and coastal influence, the site is truly unique and creates wines that are a reflection of site and place,. Owned, produced and tended to by the team at Pierro Margaret River Vineyards. The property was named Fire Gully after two large bush fires, in 1952 and 1970, ravaged the gully in the centre of the block. The Fire Gully vineyard is well-hidden from the road with a long, narrow strip flowing back to the main paddocks: so it's pretty much unknown. It is one of the Willyabrup region's most attractive and spectacular vineyards with views from the higher blocks looking over the dam, vineyards and natural bushland. Fire Gully is adjacent to Moss Wood and a kilometre from Pierro Vineyards. It is influenced by the brook system that runs through the property and out to the coast four kilometres away. The sea breeze drifts up the brook to the vineyard moderating the summer temperatures. All of the grapes are hand picked at sunrise and taken in small buckets to the Pierro winery. From here, the team at Pierro craft the wines under the guidance of Dr. Peterkin, The wines are hand made and blended in small batches .The Fire Gully wines express the very essence of Margaret River regionality and quality and are recognised for consistent excellence with each passing vintage. Product Information: Valmur is the valley between two other grand crus - Les Clos and Vaudesir. Christian Moreau's two parcels benefit from two exposures one 70 acres southeast and 30 acres northeast (1 ha in total). The vines are more than 60 years old. They produce a very full-bodied and powerful wine. Sourced from vines with an average age of over 40 years old. Half of the holding of the estate has been re-planted in recent years so quantities of this wine are reduced making them quite scarce. Domaine Paul Chavy Saint Romain Blanc La Perriere
Product Information: The bunches don't fall far from the vine! Paul Chavy is already showing talent well beyond his years. His 2022 Saint Romain Blanc La Perriere, a brilliantly fresh and mineral village, that's outstanding value, and a great introduction to his burgeoning collection. Proving Burgundy is still accessible if you know where to look! From a cooler north-east facing site in La Perriere which is on the left hand side before driving into the village from Meursault and then Auxey-Duresses. Very limestone terroir giving freshness and minerality to this cuvee. The vineyard is located almost right on the border of Auxey-Duresses and just a few minutes drive from Meursault. This wine is 100% aged in barrel with just 15% new oak and all barrels being 350 litre with a mix of coopers including the new tiny cooperage of Eric Millard which is very highly regarded. Shows wonderful perfume and depth for this level. Maker: The Chavy family has been rooted in Puligny-Montrachet for over 200 years, but it was not until 1986 that Gérard Chavy began to estate-bottle his wines, previously selling them to négociants. Following Gérard's retirement around 2005, the estate was divided into two separate entities managed by his sons, Jean-Louis and Alain Chavy. Jean-Louis Chavy has since developed a state-of-the-art winemaking facility, complete with a temperature-controlled cellar situated at the base of the village. This allows him to work comfortably while ensuring the wines are stored in optimal conditions. His son, Paul Chavy, has been part of the estate since before the pandemic and has embarked on creating his own range of wines, sourcing fruit from regions including Saint-Aubin and as far as Gevrey-Chambertin. The Chavy family continues to uphold a legacy of quality and tradition in their winemaking, offering a tantalising glimpse into the heart of Burgundy. For father and son terroir expression is paramount, with wines crafted in a consistent manner allowing the unique soil and exposure to shine through. Jean-Louis and Paul Chavy’s wines are effortless and unforced, showcasing exceptional fruit purity and a clear expression of terroir in each 1er cru. With his son Paul now working full-time at the estate after completing his winemaking studies, the added support in both the vineyard and cellar translates to even greater precision and clarity in every bottle. These wines embody a classic style, aging and developing gracefully over time. Quantities are always limited, and they sell out quickly upon release. So best to grab them while you can. The Philosophy: Paul Chavy returned to the family estate in 2020, bringing valuable insights from his studies and professional experiences. He has established a prestigious négoce business to expand their range of wines and deepen his understanding of various terroirs, villages, and crus. For the white wines, Paul employs a meticulous vinification process, featuring long, slow pressing in a pneumatic press to preserve the finest lees. The wines age in 350-litre barrels from a variety of cooperages for 11 months, followed by an additional 6 to 7 months in tank before bottling, with only light filtration and fining when necessary. The red wines are crafted with care, using 100% de-stemmed grapes. After a cool maceration of 5-7 days in stainless steel, they undergo 17-22 days of fermentation with gentle pump-overs and no punching down. After 12 months in 228-litre barrels, the wines are blended in stainless steel tanks for another 6-7 months before bottling, without fining and with light filtration. This meticulous approach, combined with Paul’s fresh insights and growing experience across new terroirs, showcases the Domaine's versatility while delivering the exceptional wines they are renowned for.
