This vintage delivers a crystalline, fluid style—glossy yet not overripe, with aromas of white peach, green apple, and grapefruit oil. The palate mirrors that brightness, layering stone fruit with a chalky, saline thread and a finish that lingers on smoked minerality. As always, Colin avoids bâtonnage and fining, using only minimal sulphur at bottling to preserve the wine’s tension and detail. Best enjoyed from 2025–2029, or now with a short decant. Domaine Joseph Colin’s 2023 Saint-Aubin 'Compendium' is a blend of seven lieux-dits across the appellation, designed to express the full range of what Saint-Aubin can deliver in a single bottle. The name means “synthesis,” and it fits—this is a Chardonnay of clarity, subtle power and quiet complexity. Grown on limestone-rich soils and made with minimal intervention—no bâttonage, no fining, no sulphur until bottling—the wine is fermented in 350-litre oak barrels and aged briefly in stainless steel for added definition. The result? A focused, linear expression with notes of orange citrus, Granny Smith apple, flint and a saline twist. A slight herbal and chalky lift rounds it out, with tension that’s unmistakably Saint-Aubin. Drink now with a short decant or cellar until 2029. Product Description: A sunny-side parcel with real finesse. Drawn from a mere 0.5-hectare plot planted in 1998, Moreau’s Vaudésir 2023 is a fine-boned, mineral-driven expression of Grand Cru Chablis. This parcel sits near the top of the slope with south-east exposure—capturing morning sun while preserving freshness. The fruit is handled with restraint: fermentation in stainless steel, followed by élevage in seasoned oak to bring textural depth without overt influence. The result is poised and detailed. Citrus, white peach and saline florals meet a fine, crystalline texture and quiet persistence. Compared to Moreau’s more muscular bottlings, Vaudésir carries itself with elegance and lift—a Grand Cru that speaks in clear, articulate tones rather than volume. Domaine Christian Moreau Père Et Fils Chablis Grand Cru Blanchot

The 2023 Chablis Grand Cru ‘Blanchot’ from Domaine Christian Moreau Père et Fils is sourced from a minuscule 0.10-hectare parcel perched near the top of the Blanchot slope. With its cooler, east-facing exposure and white limestone soils, this site brings a poised, elegant profile to the domaine’s lineup of Grands Crus. In 2023, the wine shows a floral and exotic-tinged nose—passionfruit, white orchard fruits, and a touch of quinine—lifted by finely judged oak. It’s richer and more voluminous than expected from such a cool site, yet still grounded by minerality. While already expressive, it promises greater depth with time in bottle. Drink from 2030+. Domaine de la Cras 'Cras' Monopole Bourgogne Blanc

Product Description: A monopole Chardonnay rethinking what Burgundy can be. The 2022 Domaine de la Cras ‘Cras’ Monopole Bourgogne Blanc comes from an extraordinary project just outside Dijon, where winemaker Marc Soyard is rewriting the rules of regional Burgundy. Grown on the steepest, best-exposed section of the estate’s Chardonnay plantings, this wine reflects precision farming and a low-intervention approach learned from Soyard’s years at Domaine Bizot in Vosne-Romanée.
