This Semillon from a sustainably farmed vineyard in the Hunter Valley region was hand picked from 40 year old Semillon vines. The grapes were then fermented with skins, pressed, and barrel aged for 3 months in old Chardonnay French oak. There was no additions, fining or filtration of the wine when bottled. The result is a textural, juicy wine with a zesty dry finish, with flavours of mandarin marmalade and a hint of lemon.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. Hunter Valley Semillon is lean and racy in its youth but develops texture and complexity with age. It also will reflect the origins of where it is grown. A softer expression of a well known style and so drinkable. A subtle nose of citrus and passionfruit, with that fresh cut grassy complexity present. Fresh and lively palate with lemon and bright fruit. The right amount of zest and zing for seafood or would partner well with a carbonara.

Winemaker's Selection Vat 1 Semillon only ever comes from the oldest and best blocks. The vines are all dry grown on their own roots, and date back to 1923.

Although not typically lemony, this wine exhibits more complex aromas of smoked almonds and honeysuckle as well as buttery textures from the natural malolactic fermentation. The palate displays a spicy mineral flintiness with exotic fruit flavours.
