The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The wine has won countless awards at the leading wine shows around the country and has a wonderful propensity to develop even further in the bottle. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Hints of vanilla bean and a refreshing acidity on the finish mean this decade old wine will continue to live in the cellar for many years more.

Although not typically lemony, this wine exhibits more complex aromas of smoked almonds and honeysuckle as well as buttery textures from the natural malolactic fermentation. The palate displays a spicy mineral flintiness with exotic fruit flavours.

De Bortoli are a much loved wine family for their ability to produce wines of immense value and quality that clearly rises above. Here is another great example with their Sacred Hill Semillon Sauvignon Blanc. Château dYquems 110 ha of vineyards are planted to 80% Sémillon and 20% Sauvignon Blanc. The Grand Vin is produced from only fully botrytised fruit, carefully hand-harvested over successive passes by a team of highly skilled pickers. Yields are tiny, with each vine producing just one glass of wine. Fermentation takes place in 100% new oak barriques followed by up to 36 months maturation in oak. A wine of exceptional intensity and complexity, the best vintages of Château d'Yquem are capable of aging gracefully for well over 50 years.

Houghton Wines has been championing the rivers of Western Australia to produce premium wines since 1836. The Houghton Maragaret River Semillon Sauvignon Blanc is bright straw appearance with tropical aromatics of passionfruit, gooseberry and guava. The palate is fresh with vibrant lemon and lime citrus notes. Light lees adds weight and texture to the palate. Well worth seeking out.
