The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Henschke Mount Edelstone is one of the most important single vineyard sites in Australia. The 90 year old vines has been producing a single vineyard Shiraz since 1952 and is one of Australia's truly great wines. The nose has sweet ripe plum and blueberry aromas and the palate is intense and deeply flavoured. While enjoyable upon release, this is a wine that will enjoy a decade or more in the cellar.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. This 20ha vineyard was planted on red clay loam soil at Woori Yallock in 2001 by Lou Primavera, with whom Giant Steps has a long-standing grape-supply relationship. Pinot Noir (114, MV6 and G8V3 clones) grown here on the north and north east facing slopes at 230m is noted for its complex structure and pronounced perfume. The 114 and MV6 are fermented as whole bunches in open vats, while the G8V3 is destemmed, given a long cold-soak and fermented separately to enhance its aromatic contribution. All ferments use indigenous yeasts and the whole-bunch components are periodically foot-stomped to release additional juice. The wines are pressed to 228 litre, French barriques (about 8% new) for 11 months before blending and bottling without fining or filtration.

Opus One is the coming together of two of the world's supreme wine figures, Baron Philippe de Rothschild and Robert Mondavi. Opus One began its life in 1979 when Château Mouton Rothschild winemaker Lucien Sionneau and Robert Mondavi's son, Timothy made the partnership's first vintage. Their goal was to create a wine of unparalleled quality that reflected the traditions of both houses. The wine is French in style, but Californian in substance, Opus One is produced with the utmost attention to detail. The 2006 Opus One is a traditional Bordeaux style blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. The wine shows saturated black fruit concentration with flecks of purple in the glass. The nose is one of dark chocolate, blackberry, smallgoods and rose petal. In the mouth, flavours of cassis and coffee with robust plum and cherry are only a small taste of how great this wine will become with careful cellaring.</p>
