Paringa Estate Peninsula Shiraz Mornington Peninsula The Paringa wines in the Peninsula range are an haut Mornington Peninsulathe emphasis being on the liveliness of the fruit. The fruit is sourced from three sites around the Peninsula which has the spice and black pepper characters, that are characteristic of this wine. Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Wynns Michael Shiraz is a 'best-of-vintage' Shiraz from Wynns vineyard sites in Coonawarra and is named after David Wynn's youngest son. Made in the years that best show Coonawarra's unique terroir, this latest release displays the qualities that have made the 'Michael' one of the most highly regarded of all Australian Shiraz with aromas of red currants, cherries and raspberry that mesh every so well with the olive and white spice characters. The palate follows with an elegant structure bursting with dark brooding spice and succulent ripe tannins.

A cool climate Shiraz that resembles many of the finest french examples. Lovely graphite notes, pepper, spices, and elegant fruit weaved in for good measure. Medium bodied. Elegant and age-worthy.

This classic Yarra Valley Shiraz from Yeringberg is showing those trademark Shiraz characters of cracked black pepper and great fruit weight, there is also some good concentration and a long powdery tannin finish.

MAYACAMAS VINEYARDS Cabernet Sauvignon, Napa Valley Not much has changed by way of production since Bob Travers started the Mayacamas estate in the early 1940s. The fruit is handpicked early, often in early September - abvs usually end up between 13 and 14 percent to preserve natural, altitude derived acidities. Fermentations occur predominantly in open-top cement vessels which were built in the 1950s, again to preserve acidities and vibrant fruit character. Extended ageing occurs exclusively in neutral oak some as old as 100 years typically for three years which allows the vineyard's expression to shine through the powerful fruit profile, while also minimising oxygenation and helping to maintain the powerful and tight tannin structure Mayacamas is so famous for. The wines then usually spend a further two years in bottle before it is ready to be released to the market. Mayacamas make wines that lie in stark contrast to the more prevalent rich, heavily oaked, high in abv, bombastic wines that are common in the Napa Valley.

The flourishing perfume continues to rise with an ever-present core appearing as the seamless spine. Harmoniously, these characters gracefully nuance, reinforce and offer evolution. A harmonious composition of spice, fruit, glycerin and chalky velvet produce an aristocratic experience that is nearly limitless in its depth of expression. The palate is bright and taught with natural acid however it is incredibly layered and deeply concentrated with silky smooth extract. The impressive purity of the fruit, alone , ushers superlatives however it is the fine boned and seamlessly structured palate, coupled with an air of effortless power that remains the most haunting element to this exceptional old vine Grenache.
