Bursting with blackcurrant and blueberries, this wine shows the typical characters found in the Western side of the Barossa- chocolate/mocha and black pepper, but with a surprising freshness to the wine. Frankincense and blackberries jump out of the glass, along with a slight leafiness, which comes from the whole bunch component in the wine. Soft and juicy on the palate, but with a backbone of tannin from the whole bunches that draws the wine across the palate giving it length and precision.

Grape variety - Semillon 82%, Chenin Blanc 17%, Chardonnay 1%. Colour - Pale green - straw. Aroma - Fresh and fruit driven, displaying elegant characters of apple, pear, flint and fennel. There is a floral perfume along with subtle yeast lees complexity. Palate - Light and textured with a fine creamy texture. Pear, fennel, lime and honeydew melon dominate the clean and lively palate. A wine with great drinkability. Food matches - Fresh seafood and light poultry. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River. Direct input from Forester`s viticulturist ensures well balanced canopies and crops are grown for the desired fresh fruit driven style. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Grapes were harvested at a lower baume to achieve the delicate style. Winemaking - Modern white wine making techniques are employed in the production of the Brut Cuvee, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. A long cool fermentation follows, allowing for the retention of the delicate fruit characters in the base wine.

The renowned quality of Coonawarra is a product of its thin rocky soils and underlying soft crumbly limestone which naturally produces balanced vine canopies and small crops of intensely flavoured fruit. Displaying delicate black and red fruits with lifted spice and floral notes. A finely structured Cabernet that will gain further complexity with cellaring.

Medium Straw with bright, green tinges. An intense hit of lemon curd and ripe stone fruits, entwined with subtle toasty oak and just a hint of struck match. Juicy, rich and flavorsome up front. Fresh white peaches and zesty lemon lead the charge, supported with toasty oak and a seductive mineral drive which combine to impart length, richness and complexity. Pinot noir sourced from the Coal River and Derwent valleys in Tasmania and the Upper Yarra Valley in Victoria. Bright ruby with ripe dark and red cherry fruits, raspberry coulis and wild strawberry with hints of leaf litter, spice, softly spoken vanillin oak, char siu, mushroom broth, amaro herbs and wildflowers. Graceful and pure with excellent tension between fruit and mineral acidity, fading off slowly in a fan of spiced red fruits.

A lighter ruby fortified wine, made in a rancio style, sweet fruity and finishes with a slight creamy texture.

The nose of this wine is filled with delicate aromas of green apple, citrus peel and a hint of strawberries and cream. The lees contact has enhanced the wine with richer characters of baked brioche and toasted hazelnuts. The palate is bright and vibrant with elements of granny smith apple and grapefruit as well as slightly richer notes of almond meal. The mousse has a beautifully creamy mouthfeel and the bead is fine. A balanced wine with Eden Valley elegance.
