Ferric notes of steel wool and cordite allude to the iron-rich clay soil upon which the vines prosper in the Barossa Valley. Charcuterie aromas of Jamón ibérico and Mojama dry cured tuna notes add an interesting slightly saline nuance. Rubbed olive leaves, sumac spice and ginger peel aromas round out a very enticing nose. Each year the wine is made it is labelled according to the last two digits of the vintage -- hence Reserve Bin 10A, 12A, 13A and so on. Fruit is hand-picked to small bins and whole-bunch pressed. A portion of the juice is incrementally filled to barrel directly from the press and allowed to undergo a natural fermentation. Thus ...every new (40%) and seasoned (one or two-year-old) French oak barrique is its own, unique 225-litre ferment. Enhanced mouthfeel and complexity is achieved by maturation (typically for eight months) on solids, with intermittent yeast lees stirring. The 100% malolactic fermentation is also natural. Reserve Bin A has established a strong following since it was first made in 1994. It is a fresh, minerally style that occupies a place in the vanguard of modern Australian Chardonnay. 51% Touriga and 49% Tempranillo. Although both quite tannic varieties, winemaker Peter Leask has crafted a youthful yet surprisingly supple drop. Delicious!Deep red to crimson. Fragrant nose of violets, blackberry, mulberry, tobacco and vanilla. Ripe black and purple fruit, with a seductively plush texture, some attractive cigar box and leather complexity, and a powerful finish. Yet to show its best.

Bright plum in colour, Penfolds Bin 169 Cabernet Sauvignon displays delicate notes of mint and blackcurrant, with a more savory bouquet of semi-dried tomatoes and fruit chutney at the end. A hint of oak and spice adds extra warmth. On the palate a flavour-wheel of spearmint, milo powder, chocolate and black liquorice.
