Clemens Hill was founded over 20 years ago in a remarkable setting within the bucolic Coal River Valley. The wines of Clemens Hill are and will always be, an expression of the whims of nature inexorably bound to the wisdom of winemaking. Indeed, the pursuit of a vinous expression of place takes precedence over the pursuit of accolades, but perhaps as a result of that philosophy, over time the wines have become festooned with prizes and accolades. Clemens Hill vineyard nestles into the north-east facing slopes of the ancient glacial carving that is the Coal River Valley. It sits just 75m above sea level and is cooled by maritime valley breezes while capturing the bright crystalline sun. It enjoys both shelter and exposure. Rainfall is a capricious 500mm per annum, so it is supplemented with irrigation in times of stress. Flinty minerality with hint of nougat, white peach and mouth-watering lime citrus on the nose. A punchy, powerful palate with delicious salty caramel richness right at the end. On the finish, the fruit powers through and the acid hits a crystal clean note.

Mezcal Legendario Domingo was founded in 2012 by Julian Saenger. Born and raised in Mexico, Julian has always had tremendous love and respect for the art of mezcal production, often finding ways to delve into production, marketing, brand launches and general support of the category throughout Mexico. When he finally found the opportunity to create a brand of his own through partnership with the Velasco family, he chose to centre the brand design around a recurring feeling he experienced through his journey in mezcal: celebration. Through its various labels, designed in Papel Picado, Legendario Domingo highlights different mezcal producing regions of Mexico, demonstrating exemplary distillation tradition from each region and emphasizing the differences in terroir. The mezcals Legendario Domingo produces are Palenque and regional designates (similar to vineyard designates in wine), purposefully emphasizing each region by accenting the terroir and capturing the agave varietal character, aromas, flavours and mouthfeel that wild fermentation and artisanal production afford. This Mezcal is made from 100% Cultivated Maguey Espadín (Agave Angustifolia) harvested at 8-9 years old from San Luis del Rio, in the Oaxaca region by Maestro Mezcalero Familia Colon. The piña is cooked for 4-5 days in underground conical ovens ignited with Tepehuaje (Lead Tree) and sabino wood, both woods endemic to this region. Not a single tree is cut down, as all wood is gathered from fallen, dead trees. The roasted piña are then crushed by a Tahona mill, Chilean stone pulled by horse, method to crush the agave after cooking. Fermentation takes place in open underground wooden vats with fresh spring water for 10 days. No yeast is added, and instead indigenous yeast from the air ferments the agave juice. The mezcal is then double-distilled in a 300 litre Arabic Alembic pot still. The mezcal is then rested 30-45 days prior to being bottled. Each bottle is then filled, labelled and boxed by hand, completing the artisanal process from field to bottle. This Espadin has fresh citrus flavours with a hint of minerality, followed by a mild taste of smokiness and ripe Oaxacan fruits.

The Domaine Faiveley Chambertin Clos De Bèze Ouvrées Rodin Grand Cru 2020 is a wine of immense complexity and depth, representing the very best of Burgundy's winemaking tradition. This Grand Cru is crafted with meticulous attention to detail by the skilled winemakers at Domaine Faiveley. Based in Nuits-St-Georges, the famous Domaine Faiveley was founded in 1825 and in more recent times, the domaine has greatly expanded its vineyards across the entire Côte d’Or. The grapes are entirely de-stemmed and fermented in a mix of new wooden vats for the top end wines and stainless steel for the lesser cuvées. Once notorious for being fairly austere, there has been less emphasis on extraction over the last ten years and the wines show increased freshness, purity of fruit and more judicious use of oak. A contender for one of the most improved domaines in Burgundy over the last decade. Coming from a "Vieilles Vignes" parcel (60 years old), "Les Ouvrées Rodin" is characterised by its elegant tannins and delicate structure. Marthe Sirieys, Erwan Faiveley's great grandmother, had family links with art amateur Maurice Fenaille. In 1885, the latter became Auguste Rodin's patron. In memory of the unique relationship with Auguste Rodin and as a hommage to the timeless works created by him, Domaine Faiveley names this new gem of the Côte de Nuits: "Les Ouvrées Rodin" The grapes are harvested and sorted by hand however the proportion of de-stemmed grapes and whole clusters varies depending on the vintage. The wines are punched down daily in order to extract colour, tannins and aromas from the skin of the grapes. After this wine undergoes a 19 day vatting period, the alcoholic fermentation is complete. The free-run wine is run off using a gravity system whilst the marc is pressed slowly and gently in order to extract an exceptionally pure press wine. Then, the wine is aged for 16-18 months in French oak barrels (60% new oak and 40% one-wine barrels) which have been selected for their fine grain and moderate toast. Finally it is left to age in cellars at consistent, natural hygrometry and temperature. The vines for this wine were planted in 1966. Deep ruby red hue with purplish glimmers. The complex nose offers a combination of fruit, spice and floral notes. The lively palate displays exceptional tension, elegant tannins, a hint of white pepper and menthol notes. Les Ouvrées Rodin is an intense, deep, smooth, elegant and subtle wine and a perfect reflection the character of its historical terroir. Drink now or will age gracefully with careful cellaring until 2055.

Gruner is often compared to other varieties such Riesling with slightly more volume, texture and more approachable acidity. The texture and volume of this varietal means it is a very ver satile wine to match with foods. It is well suited to the bold flavours of Vietnamese cuisine such as summer rolls and noodle salads. Once they realised there were shortages they took these released to the wayside, making room for other non-age statement whiskies such as Essence of Suntory Volumes 3 and 4 and the recent Yamazaki Cask Finish releases. Back in 2021 and now again in 2022 we have again the Yamazaki Limited Edition 2022. This release was matured in Mizunara wood, resulting in an aromatic and creamy expression delivering a fruity and lively tasting experience.

Piper Heidsieck NV is a champagne with great fruit, a good mouthful and a harmonious balance. Fresh fruit dominates the nose, predominantly pear and russet apple with a few hints of citrus fruits such as star fruit. The finish evokes flavours of fresh grapes, and a touch of aniseed, followed by a structured and a full-bodied finish. A juicy, fleshy pear and golden grape texture in the mouth, and the finish narrows to citrus and grapefruit flavours.

In the 1830s the Woodford County distillery was the setting for a series of discoveries and innovative practices that would define the bourbon industry for generations to come. Today that pioneering and innovative tradition is embodied in the Woodford Reserve Distillery's Master's Collection. A tradition beginning when Master Distiller James Crow joined distillery owner Oscar Pepper to create the first true Kentucky bourbon whiskies. In 2004 the Woodford Reserve Distillery introduced a new era of innovation to the historic Kentucky Bourbon industry with the first release of its Master’s Collection, “Four Grain”. For this 2022 release Master Distiller Chris Morris and Assistant Master Distiller Elizabeth McCall have drawn upon the rich history of Kentucky Bourbon and their own interests for inspiration. When “new make” Bourbon is entered into the barrel it begins the maturation process. There are many factors involved in this and barrel entry proof plays an important role. Proof is controlled both as it enters the barrel (barrel entry proof) and as it leaves the barrel (bottle proof) by adding water to achieve a desired flavour profile. A higher concentration of water added as it enters the barrel, resulting in a lower proof, allows for less water to be added upon exit, which results in a greater concentration of the natural flavours absorbed from the charred oak. Barrel entry proof has changed over the past two centuries. The bourbon of the 19th century had a barrel entry of 100 to 103 proof. After the repeal of Prohibition, barrel entry proof levels began to increase. In 1962 the barrel entry proof was increased to the present 125 proof standard. This 2022 Master’s Collection features the 100 proof entry of a bygone era and is presented at 90.4 proof. The result is this Historic Barrel Entry, a rich and darkly robust expression of Woodford Reserve Kentucky Straight Bourbon Whiskey. A deep russet orange in colour with an alluring medley of aromas of vanilla bean and dried apple dusted with nutmeg, clove, and cinnamon with a hint of cocoa. Roasted coffee and hazelnut soften into notes of dark cherry and plum muddled with spearmint. On the palate there are flavours of rich toasted oak is tempered by overripe banana and a medley of cooked berry fruits. Hints of leather, coffee, and baking spice trail into minty dark chocolate. A lingering finish of charred oak, leather, and orange oil.

Domaine Sylvain Cathiard stands as a testament to the dedication and passion of the Cathiard family. This small domaine, established by Sylvain Cathiard's grandfather in the 1930s, carries with it a rich history rooted in the legendary Domaine de la Romanee Conti and Domaine Lamarche. Sylvain's father, Andre, lovingly nurtured the domaine from 1969 until 1985, when the reins were passed on to Sylvain himself. In the following years, Sylvain embarked on a journey to develop his own vineyards, renting parcels from his father and other vignerons. Soon after he acquired his father's original vineyards solidifying his commitment to the craft. In 2006, Sylvain's son, Sebastien joined him marking the beginning of a new chapter for the estate. Together, they formed Sylvain Cathiard et Fils, a collaboration that combines tradition with a fresh perspective. Since 2011, Sebastien has taken the helm, carrying on the family legacy while Sylvain enjoys a well-deserved retirement. Spanning across 5 hectares, the vineyards of Domaine Sylvain Cathiard grace the appellations of Vosne-Romanée, Nuits-St-Georges and Chambolle-Musigny. Of significant note is their tiny parcel in Romanée-St-Vivant, situated just below the iconic Romanee Conti. Here, they proudly hold the title of the smallest land-owner of this magnificent Grand cru. Every aspect of vineyard work is executed with meticulous attention to detail by Sebastien, his wife, and a dedicated team. Embracing organic principles, they prioritize the natural harmony of the vines, although certification has not been sought. When it comes to winemaking, Sebastien adopts a hands-off approach, allowing the wines to evolve naturally. Whole-cluster fermentation takes place, with the juice cold settled for approximately 10 days. The wines then undergo a skin contact period of 22 to 30 days. Maturation occurs over 18 months in oak barrels, sourced primarily from tonellerie Remond and Francois Freres. The percentage of new oak used varies across the appellations, with village wines aged in roughly 1/3rd new oak and 2/3rds of 1-year-old oak. Premier Crus see a balance of 50% new oak and 50% 1-year-old oak, while Grand Crus are aged in two new barrels and one one-year-old barrel. Since 2000, the wines have not been fined or filtered, allowing them to express their true character. Sebastien Cathiard's wines exude an unparalleled sense of harmony, with a soft and elegant texture that speaks to their finesse. Since taking over the domaine, Sebastien has listened attentively to those fortunate enough to taste alongside him. As a result, he has gradually reduced the percentage of new oak used for aging, allowing the fruit to shine with natural intensity and balance. The Vosne-Romanées, in particular, have garnered a reputation as some of the finest in the village.Each bottle from Domaine Sylvain Cathiard is a testament to the fully mature vineyards that have yielded fruit of exceptional quality. With a limited production of around 50 barrels in a good vintage, these wines are a true embodiment of passion, tradition and the pursuit of excellence. The Sylvain Cathiard Bourgogne Aligote 2022 is a brilliant addition to the Cathiard range, showcasing the unique character of this grape variety. Crafted from a small amount of Aligote sourced from vines in the Hautes Cotes, with 95% coming from 30-80-year-old vines in the village of Villers-la-Faye above Corgoloin, and the remaining 5% from vines in Nuits St Georges planted in 2011. In the glass, this wine reveals a bright and pure white hue that invites exploration. On the nose, enticing aromas of fresh apple, citrus and greengage captivate the senses, offering a refreshing and invigorating experience. It is a medium-bodied wine with a forward nature, displaying excellent depth and polish. Fermented and matured in stainless steel tanks, this Aligote exemplifies Cathiard's commitment to preserving the wine's brightness and purity. The 100% destemming process, which is a characteristic of all Cathiard red wines, ensures the expression of intensity and purity that is synonymous with the winemaker's style. The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. The GlenAllachie Distillery continues to innovate, releasing a 15-year-old whisky in April 2022 and a celebratory trilogy of Speyside Single Malts in honour of Billy Walker's 50-year career. In January 2023, they introduced The GlenAllachie 2012 Cuvée Wine Cask Finish and in March 2023, they released three new expressions, highlighting their commitment to innovation and excellence in the whisky industry. The GlenAllachie distillery is known for its impressive collection of casks, with over 50,000 casks spanning across 16 on-site warehouses. He played a key part in the resurrection of Deanston and Tobermory Distilleries and acquired BenRiach, GlenDronach and Glenglassaugh Distilleries, leading them to phenomenal success. Billy's hands-on approach is reflected throughout all stages of production, with a focus on quality over quantity. He hand-picks the finest casks to create exceptional quality whiskies to be enjoyed across the globe. The GlenAllachie Virgin Oak Series, was first matured in American Oak (Quercus Alba) Ex-Bourbon Barrels. To add a delicate and distinctive twist, the whisky then underwent additional maturation for approximately 18 months in specially selected Virgin Oak Casks. The subtle flavour differences in this series are led by a variety of influences: the Oak species, the local terroir and the period of natural air drying, along with the toasting, charring and coopering of the casks. Each of these reacts uniquely with the GlenAllachie spirit, adding superb texture, depth and variety. This mahogany malt obtains its spicey, treacly flavours from hogsheads made of Spanish Oak (Querous Robur) sourced from the regions of Galicia and Asturias, in particular the Cantabrian Mountains, which have a cooler climate and greater humidity. Before being filled, the wood is air dried for around 18 months, opening up the oak for the GlenAllachie spirit to extract its flavours. Mahogany in colour the nose has lashings of orchard fruits, baking spices and sticky toffee pudding, with notes of brown sugar, glazed cherries and citrus. The palate is bursting with chocolate, coffee and heather honey, followed by notes of pepper, ginger and molasses, with banana and sultanas on the finish.
