GlenAllachie 10 Year Old Strength Single Malt Scotch Whisky (Batch 9)

The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. The GlenAllachie Distillery continues to innovate, releasing a 15-year-old whisky in April 2022 and a celebratory trilogy of Speyside Single Malts in honour of Billy Walker's 50-year career. In January 2023, they introduced The GlenAllachie 2012 Cuvée Wine Cask Finish and in March 2023, they released three new expressions, highlighting their commitment to innovation and excellence in the whisky industry. The GlenAllachie distillery is known for its impressive collection of casks, with over 50,000 casks spanning across 16 on-site warehouses. The passionate team at GlenAllachie has complete control of the end-to-end maturation process, allowing them to make decisions for all the right reasons. They use a variety of casks including ex-bourbon, ex-sherry, and virgin oak to create unique and complex flavours in their single malt whisky. They also have a range of cask finishes such as Port, Madeira, and Tokaji to add depth and complexity to their whiskies. Their commitment to quality and attention to detail has earned them numerous awards and accolades, cementing their position as one of Scotland's top independent distilleries. Billy Walker, the Master Blender of The GlenAllachie Distillers Company, has transformed the distillery since acquiring it in 2017. With a 50-year experience in the Scotch Whisky industry, Billy has received numerous awards, including Master Distiller/ Blender of the Year (World Whisky Awards, 2020) and was inducted into Whisky Magazine’s Hall of Fame in 2021. He played a key part in the resurrection of Deanston and Tobermory Distilleries and acquired BenRiach, GlenDronach and Glenglassaugh Distilleries, leading them to phenomenal success. Billy's hands-on approach is reflected throughout all stages of production, with a focus on quality over quantity. He hand-picks the finest casks to create exceptional quality whiskies to be enjoyed across the globe. GlenAllachies very first bottling of The GlenAllachie 10 Year Old Cask Strength happened by chance. In 2017, whilst reviewing parcels of stock from 2007 and 2008, their Master Distiller Billy Walker was so delighted by the balance and depth of the samples that he immediately decided to add a younger expression to our core range. Their fourth batch was awarded ‘World’s Best Single Malt’ at the World Whiskies Awards 2021, so the bar has been set high as they introduce their sixth release. The GlenAllachie Cask Strength Batch 9 is an intense mahogany in colour with a nose bursting with ripe red berries, hazelnuts and heather honey, with hints of orchard fruits, cinnamon, spice and gingersnaps. The palate has lashings of dark chocolate. honeycomb and caramelised demerara sugar followed by notes of treacle. mocha and ginger, with plum and toffee on the finish. Tiberio Montepulciano d'Abruzzo Colle Vota

Located in the region of Abruzzo, Tiberio stands as a testament to the enduring legacy of winemaking. This family-owned winery has been crafting exceptional wines for generations, harnessing the blessings of fertile soil and a favourable climate. The vineyards boast some of Italy's oldest grapevines, their roots intertwined with the ancient Roman times from which they draw inspiration. Tiberio proudly upholds the winemaking traditions passed down through the ages, ensuring that every bottle encapsulates the essence of the region and the unique characteristics of each grape variety. At Tiberio, the winemaking process is executed with meticulous care, with every step carefully considered and flawlessly executed. From the hand-harvesting of the grapes to the thoughtful selection of oak barrels for aging, no detail is overlooked. The result is a remarkable collection of wines that effortlessly showcase the true essence of the region. In the year 2000, Riccardo Tiberio stumbled upon a rare plot of Trebbiano Abruzzese vines, a discovery that would shape the future of the winery. Recognizing the potential of this find, he made the decision to acquire the land and dedicate it to producing single estate wines. Initially, a selection of indigenous and international grape varieties adorned the vineyards, but with time, the focus shifted to Pecorino and Trebbiano Abruzzese, reflecting the estate's unwavering commitment to quality and showcasing the unique characteristics of Abruzzo's native grape varieties. Among Tiberio wines, Montepulciano d'Abruzzo stands proudly as one of their most celebrated creations. This full-bodied red wine is crafted from the Montepulciano grape, flourishing in the clay and limestone soils that define the region. With its deep ruby color and captivating aromas of ripe berries and spices, it entices the senses and transports the drinker to the heart of Abruzzo. Alongside their renowned reds, Tiberio takes equal pride in their Cerasuolo d'Abruzzo, a rosé wine that captures the very essence of summer in a single glass. Crafted from the Montepulciano grape, this rosé embodies a delicate balance between fruitiness and acidity. Its flavors of cherry, strawberry and hints of Mediterranean herbs evoke memories of sun-drenched afternoons and warm evenings, leaving a lasting impression on the palate. The Tiberio Montepulciano d'Abruzzo Colle Vota vineyard is a remarkable site that produces a unique expression of Montepulciano. Unlike the "Riserva" designation, Colle Vota is classified as a "Single Vineyard" Montepulciano d'Abruzzo, highlighting its distinct characteristics that set it apart from other Montepulciano vineyards at Tiberio. The Montepulciano grapes grown in the Colle Vota vineyard exhibit notable differences. The bunches and berries are smaller, with crunchier and thicker skins. This contributes to the wine's exceptional texture and structure. Additionally, the Colle Vota Montepulciano takes longer to reach maturity, benefitting from the vineyard's microclimate that provides an extended hang time. These factors combine to produce a truly unique Montepulciano wine. Interestingly, the Colle Vota vineyard thrives in cooler and even rainy vintages. The resulting Montepulciano d'Abruzzo wines crafted from these grapes possess a refined and light character, reminiscent of Burgundy's Pinot Noir and Piedmont's Nebbiolo wines. Despite these influences, the wine retains its Montepulciano backbone and soul. Recognizing the exceptional quality of the Colle Vota vineyard, Tiberio has decided to bottle this wine separately, allowing it to shine as a distinct expression of both place and the potential of the Montepulciano grape variety. The vineyard was planted in 2000 using selections from the oldest Montepulciano vineyard on the property. This original Montepulciano clone has adapted to its specific environment, characterized by different soils, subsoils and a unique microclimate. As a result, a new Montepulciano biotype has developed, giving rise to a highly perfumed and refined wine. Tiberio Montepulciano d'Abruzzo Colle Vota 2019 is a wine that truly captures the essence of its unique terroir. Grown at an altitude of 350 meters (1200 ft) in a 1.6-hectare (4-acre) vineyard, this wine showcases the meticulous craftsmanship and dedication put into its production. The soil composition of limestone and marly-clay over a sandstone-rich bedrock contributes to the wine's character and complexity. The vines, trained using the Single Guyot method, have a planting density of 4,000 vines per hectare. With a yield of 28 Hl, the grapes are carefully hand-harvested to ensure optimal quality. During the winemaking process, only indigenous yeasts are used for fermentation in stainless steel tanks, which lasts for 20 days. Malolactic fermentation takes place in tank, further enhancing the wine's texture and flavour profile. The aging process occurs in tank, allowing the wine to develop and mature gracefully. Bottled without fining or filtration, the Tiberio Montepulciano d'Abruzzo Colle Vota 2019 undergoes additional aging in the bottle before release, allowing its flavors to harmonize and evolve. Upon tasting, this wine reveals intense and expressive flavors. Notes of yellow peach, sage, cedar, cinnamon, marzipan, spices and earthy soil come together in a highly complex and captivating bouquet. The mouthfeel is long, deep and creamy, filling the palate with refined, silky tannins and a subtle saline character. The finish is energizing and persistent, leaving a lasting impression. Crafted from 100% selections of Montepulciano d'Abruzzo, transplanted to a higher single vineyard, this wine represents a specific biotype uniquely adapted to its microclimate.

Its reputation lies in its distinctive character and ability to showcase the specific qualities of its terroir. Unlike many other Chardonnay wines, Chablis is typically not aged in oak barrels, resulting in a refreshing and mineral-driven flavour profile. The cool climate and limestone-rich soil of the region contribute to its unique taste, featuring hints of citrus, green apple, and a flinty mineral essence. Chablis wines are categorized into various appellations, such as Grand Cru and Premier Cru, signifying the finest vineyard locations. The sheer purity and refinement of Chablis have made it a sought-after choice among wine enthusiasts worldwide. On the palate, this white wine unfurls with a lively and mineral-driven character, showcasing the essence of lime zest, crisp green apple and the subtle touch of stones. Meticulous winemaking techniques have resulted in a wine of remarkable richness and complexity, unveiling intriguing aromatic nuances reminiscent of fresh croissant and baked apple. Crafted exclusively from Chardonnay grapes, this Chablis embraces its pure expression, free from the influence of oak, allowing the bright and mineralic qualities of the variety to shine through. It stands as a testament to the exceptional quality of Chardonnay and serves as a true reflection of the esteemed Chablis region, an embodiment of the winemaker's skill and dedication, Christophe Patrice.

The Little Hampton single vineyard site near Trentham sits at 730m above sea level, making it one of the coolest in the Macedon Ranges. The deep red volcanic loams over hard basalt outcrops give Little Hampton a unique balance between aromatics and power, producing exceptional fruit, particularly Pinot Noir, which forms the flagship Little Hampton Pinot Noir. Other vineyards include Straws Lane, planted in the 1980s to Pinot Noir and Gewurztraminer near Hesket, Midhill, with slightly acidic and well-drained red volcanic soils and Werribee, which produces powerful and robust K Road Shiraz and unadulterated Minnow wines. The Pyrenees vineyard produces Shiraz with natural spicy aromas, a full palate and long fine tannins, thanks to the inland location at the foothills of the Pyrenees Mountain range. Shadowfax Wines' commitment to minimal intervention in the winery and precision farming results in wines that are vibrant, pure and drinkable. The Shadowfax Geelong Pinot Gris 2022 is a delightful wine that showcases a light white straw color with a green hue and brilliant clarity. The aroma is complex, with nectarine and lychee fruits complemented by nori and mineral flint. There is a focus and depth to the nose, with barrel-derived complexities and floral notes complementing the more primary fruit aromas. On the palate, nectarine and apricot immediately wash across, with papaya, ginger and fresh florals adding length and lusciousness. The palate is generous, but the healthy acidity maintains vitality and zest, with a touch of saltiness on the finish. This is a great example of maritime Pinot Gris. This wine pairs well with salmon and cream cheese bagel, nori roll and three cheese souffle. The viticulture of this wine involved a wet winter and cool spring in Geelong, setting up the growing season. Small crops fully ripened with a warm summer while retaining good acidity. The winemaking process involved firmly whole bunch pressing the hand-harvested fruit to release the full Pinot Gris flavor profile. Natural fermentation occurred in older French barrels, with the wine left to unwind and age slowly on its ferment lees to add generosity.

Glendalough 7 Year Old Mizunara Finish Single Malt Whiskey

The Glendalough Distillery was established by a group of friends from Wicklow and Dublin who shared a deep passion for reviving the rich heritage of craft distilling in Ireland. In the 18th and 19th centuries, Ireland was home to over 200 licensed distilleries, producing diverse styles of poitín, whiskey, gin, and even absinthe. However, in recent times, that number has dwindled to a small handful. After many discussions, the friends decided to take a chance on something more meaningful and built a craft distillery near their favourite spot in the Wicklow Mountains, Glendalough. The area, known as "the garden of Ireland," is renowned for its natural beauty and Glendalough, or the Glen of two Lakes, is one of the most visited valleys in Ireland. It is also home to a 6th-century monastic settlement founded by St. Kevin, a legendary monk who is the man on the Glendalough bottle. Monasteries like Glendalough were the birthplace of distilled drinks. A key influence on the flavour of Glendalough whiskey is the wood in which it has spent time. Countless nuances affect how the wood injects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char. To make their gins, Glendalough forages wild plants from the mountains around the distillery. All the plants are sustainably foraged by one person, and what they pick goes fresh into the still within hours of foraging. The story of St. Kevin is where Glendalough draws its inspiration. He abandoned safety and comfort to follow his passion and create something more meaningful in the mountains. St. Kevin was born into Irish royalty, but he felt like a man apart. He disappeared into the mountains and became one with the wild, living off the land by the upper lake of Glendalough for seven years while pondering his place in the world. One of the many stories that spread around Ireland and inspired people to seek out this holy man and his deep, hidden valley is that of a blackbird landing in his hand. He stood day and night until the eggs hatched and the chicks fledged, showcasing his unwavering resolve and connection with nature. Eventually, he built his "City of 7 Churches" by the lower lake, which still stands 14 centuries later as a testament to his legacy. The Glendalough Distillery places great emphasis on the wood used to mature their whiskey, with countless nuances affecting the flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char. Their whiskeys mature in American white oak Bourbon barrels, which lay the flavour foundation that has become the backbone of the Irish whiskey taste. They also finish all of their whiskeys in a second, very different cask. They use Spanish Oloroso sherry butts to finish their Double Barrel, Dublin porter barrels for their 7-year-old single malt, and legendary Mizunara oak for their 13-year-old single malt. They are also proud to play a part in bringing Irish oak back into use for aging Irish whiskey, helping to manage these ancient forests, and doing their bit for the regeneration of these beautiful, broad-leaf, deciduous woods. Glendalough Distillery embarked on a relentless search for the most flavourful oak in the world, taking them from their own wooded mountains in Wicklow to the volcanic north of Japan, Hokkaido, where they discovered Mizunara, the most sought-after oak in the whiskey world. The resulting whiskey is vivid yet delicate, with seamless depth and a vibrant, fruity and floral nose. It boasts a luxuriously smooth mouthfeel with notes of dark chocolate orange, sandalwood and cinnamon that are synonymous with Mizunara whiskeys. The Mizunara 7-year single malt from Glendalough benefits from an exceptionally long finish of toasted oak and oriental spices, with the dark chocolate lingering even longer, making for a truly exceptional whiskey.

The Glendalough Distillery has achieved a milestone for Irish whiskey by finishing their single cask, mainstream whiskey for up to a year in the rarest of all casks - virgin Irish oak. This allows everyone to experience the unique flavours of Irish oak. Each bottle is numbered and traceable to the cask and even the tree from which it came. They sustainably fell 140-year-old trees from the ancient oak forests in the mountains around the distillery, beginning a year-long process that ends with an Irish oak hogshead. These special casks are filled with the most quintessentially Irish of whiskeys - pot still. The higher levels of toasted oak and vanilla flavours brought by Irish oak complement and balance the classic pot still spices. The Glendalough Double Barrel Whiskey 700ml is characterized by sweet citrus notes with hints of vanilla, caramel, banana and oak spices. On the palate, one can taste toffee pears, treacle, oak, cinnamon, nutmeg and grapefruit, leading to a creamy vanilla, forest fruit, almond and toasted oak finish.
