GlenAllachie 10 Year Old Chinquapin Oak Single Malt Scotch Whisky
The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. The GlenAllachie Distillery continues to innovate, releasing a 15-year-old whisky in April 2022 and a celebratory trilogy of Speyside Single Malts in honour of Billy Walker's 50-year career. In January 2023, they introduced The GlenAllachie 2012 Cuvée Wine Cask Finish and in March 2023, they released three new expressions, highlighting their commitment to innovation and excellence in the whisky industry. The GlenAllachie distillery is known for its impressive collection of casks, with over 50,000 casks spanning across 16 on-site warehouses. The passionate team at GlenAllachie has complete control of the end-to-end maturation process, allowing them to make decisions for all the right reasons. The GlenAllachie 10 Year Old Chinquapin Oak Single Malt Scotch Whisky 700ml is an exceptional malt from Batch 2 of the Virgin Oak Series. It was first matured in American oak ex-Bourbon barrels before undergoing additional maturation in casks made of Chinquapin Oak (Quercus Muehlenbergii) for approximately 18 months. The casks were air dried for almost four years and then toasted to a medium level before hosting the spirit. The result is a complex and zesty malt with a rich bronze color, bursting with runny honey, sweet cinnamon and orange peel. Bottled at 48% and with natural colour and non-chill filtration, this malt offers a unique tasting experience. On the nose, it bursts with orange zest, heather honey and pecan, with notes of butterscotch, nutmeg and liquorice. On the palate, it offers lashings of cinnamon, barley sugar and toasted biscuits, followed by rose hips, orange peel and heather honey. This exceptional malt is a testament to the distillery's commitment to quality and attention to detail.
Balvenie The Creation Of A Classic Single Malt Scotch Whisky
This story is a celebration of David C. Stewart M.B.E.’s creativity and inventiveness, when he created The Balvenie Classic – and in doing so, pioneered wood finishing. It is also the story of the team who helped him, through patience and perseverance, to try something new, and create something exceptional. The original cask finish. Probably the finest highland malt whisky. Those were the words on the first ever bottle of The Balvenie Classic. This story is a celebration of David C. Stewart M.B.E.’s creativity and inventiveness, when he created The Balvenie Classic – and in doing so, pioneered wood finishing. Aromatic and lively, aromas of vanilla and spice evocative of dried clove and chai are layered on a base of earthly, malty undertones reminiscent of Balvenie’s own barley loft. On the palate there is a perfect complement of light oatmeal syrupiness and brittle toffee are followed by delicate hints of spice and a rich drying sensation from European oak.
Domaine Roux Saint-Aubin 1er Cru Jadis Blanc
This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. This is a wine with real breeding.

Domaine Chanson Chablis
Domaine Chanson Chablis 2020 vintage is a pale gold colour. Subtle aromas of citrus fruit on a hint of minerality. Well-structured and complex. Dense with a tight texture. Refreshing aftertaste with a salty note. After a very mild winter, spring arrived with warm temperatures in March which engendered a very quick and sustained growth of the vines. After a very short frost episode early May with no consequence in the vineyards, a mild weather with some rains settled down until end of June. Summer was punctuated in July by several and quite long heat waves. Vineyards with a clay soil were less affected by the low level of rainfalls during spring and by the summer heat. The harvest in Burgundy started around August 20, which was historically early for the region. Tasting : Pale gold colour. Subtle aromas of citrus fruit on a hint of minerality. Jefferson's Very Small Batch Bourbon

Pooley Cooinda Vale Riesling
Pooley was established in 1985 when the family planted 10 rows of Riesling & 7 rows of Pinot Noir on their property at Coal River in Southern Tasmania. This wine comes off those first planted Riesling vines. Such an enticing wine from the first sniff; jasmine, grapefruit & white flowers on the nose, while the palate reveals lavender, lime zest, green apple & fennel. Seductive stuff. The Cooinda Vale vineyard is ideally positioned facing northeast overlooking the Coal River in southern Tasmania. On the 43.5 Latitude line, the vineyard is planted on northeast facing slopes at 130m above sea level. This is a unique microclimatic location, being well protected from prevailing winds but still highly influenced by maritime conditions. The long growing season, which can extend into May, with high sunshine hours, predominately winter rainfall and the occasional frost and snow, combine to provide an excellent condition for cool climate grape varieties, such as Pinot Noir, Pinot Gris, Riesling and Chardonnay. Initially the nose is a little shy with fresh notes of citrus peel and blossom. The palate is typical Cooinda Vale, refined and elegant with lemon sherbet, cumquat and marmalade. Strong acid profile with a persistent finish.
Louis Roederer et Philippe Starck Rose Nature
Conceived as an exchange and shaped by friendship, this wine is first and foremost a result of the free-thinking that came out of a meeting between Louis Roederer’s CEO Frédéric Rouzaud, his cellar master Jean-Baptiste Lécaillon and the designer Philippe Starck. Their conversations led to the creation of the very first Brut Nature in 2006 and the relationship continued to grow over the years to give us the 2009 and 2012 vintages. The Brut Nature was born from an idea of the dreamed-for, perfect champagne. It is a wine that captures the freshness of the clay soils in a sunny year, a wine of truth, the testimony to an encounter, a soil, a year, free spirits and the independent spirit that runs through the Champagne House. It is a champagne that perfectly encapsulates this new exploration of a Louis Roederer terroir. The Louis Roederer et Philippe Starck Brut Nature 2015 has a pink hue with bright, fresh tints and generous, slow moving bubbles. The deep Pinot noir bouquet is a blend of delicate citrus notes, red fruit and spice. After aeration, the red fruit becomes intertwined with notes of honey and gingerbread. On entry, the wine is juicy, fruity, concentrated and palate coating. The sun-drenched fruit and its slightly sweet texture give one the impression of biting into a perfectly ripe blackberry. The wine shows remarkable poise thanks to the sensual, almost powdery texture that balances the zero dosage. The end palate reveals slightly spicy, smoky and iodised notes that usher in a sensation of Umami.
