The natural unadulterated fruit, flower and spice aromas, which are contained in this elixir of distilled wine, aged in French oak barrels, are the essence of our vineyards and our knowledge. Subtil & So, the new VSOP Cognac Grande Champagne by Jean Fillioux. With the noble bottling, the house once again proves that the Grande Champagne, originally known for its old cognacs, can also produce excellent younger qualities. The proof: a coveted gold medal from the Spirits Selection by Concours Mondiale 2021 and a wonderfully harmonious profile of fruity freshness and warm spiciness. The 4 to 6-year-old VSOP comes from the picturesque La Pouyade winery, which has been family-owned since 1894 and is completely independent to this day. It is surrounded by 25 hectares of the finest white wine grapes. They thrive in the "Golden Triangle", the heart of Grande Champagne. They are cherished and loved in the fifth generation by Christophe Fillioux and his family, who are one with their vineyard. You can taste that in their extremely aromatic cognacs – and today they are valued around the world. Tasting Notes: Nose: fruity and delicately floral. Palate: Fresh figs and citrus blend with nutmeg, almond paste and orange blossom. Finish: Enjoyable and warming with subtle spice.

A brandy harvested and distilled in 2008, from the Grande Champagne terroir! A "young" Grande Champagne to discover! Tasting notes: Colour: a beautiful straw yellow colour Nose: Scents of rose, ripe pear, fresh fig. Palate: fruity, lively and exhilarating: muscat grapes, mirabelle plum... and deliciously greedy: madeleine, shortbread biscuits. Lovely supple finish on almond, and orange blossom - the oak, wonderfully integrated, brings just the right amount of roundness.

Very floral nose, spring flowers, hawthorn, wild rose, acacia, mixed with aromas of white peach and nectarine. A touch of violet candy. Delicious liveliness on the palate with aromas of passion fruit, lemon pie, dried apricot. Long finish on sweet spices, coriander, cardamom. In short ... Extremely elegant!

Sainte Louise Napoleon French Brandy is a blend of French grape brandies which have matured in oak casks until reaching bottling age. Beautiful aroma, full bodied and smooth. Enjoy neat or with your favourite mixer.

A generous and harmonious blend, developing intense aromas of candied fruits, combined with spices and oak, and enhanced with elegant floral notes. Well-balanced between its elegant structure and its roundness, with a good length of its aromas on the palate.

GAUTIER XO is a powerful blend of old eaux-de-vie, some of which come from or "Paradise Cellar" where the oldest and most precious Cognac eaux-de-vie are kept. A golden amber colour. A rich and harmonious blend of old eaux-de-vie, combining intense aromas of candied fruits, cinnamon and toasted bread, with subtle floral notes. Generous and smooth in the mouth, it offers a beautiful length on the palate.

Amanda and Rob hand craft a unique and rare blueberry liqueur, a labour of love and passion, called Sassy Sister Decadent Blueberry Brandy Liqueur. Produced at Bilyara Springs in the foothills of the pristine Strathbogie ranges in north-east Victoria, where our organically grown blueberries and red currants thrive. Our annual crop of berries is steeped for 12 months in a 20+ year old brandy which has been blended with a younger vibrant brandy spirit in the style of a cognac (both of which have been aged in American and French Oak barrels). This is then crushed and the essence is returned to the vat for another 4 to 5 years to allow the fruit and spirit to mature into a smooth , well rounded and delicious liqueur.Our family and friends have enjoyed Sassy Sister Liqueur for many years and finally convinced us to offer her to the wider audience. In May of 2019 we released her into the market and simultaneously entered her into 2 prestigious competitions, the 2019 Australian Distilled Spirits Awards (ADSA) where she won a Silver medal and the Melbourne International Spirits Competition winning another Silver medal being just 1 point short of a Gold (we were unaware of the necessity to inform the judges that her deep rich, red colour is all natural and not synthetic). As small craft distillers we were thrilled to receive the awards and the accompanying accolades acknowledging that Sassy Sister Decadent Blueberry Brandy Liqueur is as special as we believed and at 33.4% AV she is no shrinking violet!As a digestif or aperitif she is great on her own, but it is in cocktails where she really shines.
