The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in a handcrafted Solera vat that is never emptied, but is always kept at least half full creating a deliciously harmonious and intense whisky.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Blending peanut butter with whiskey? We thought the idea sounded a little nutty too but some of life’s greatest pleasures do indeed come about by surprise… or in this case, by mistake! One afternoon in Kentucky, a distillery owner’s loyal Sheep Dog knocked his glass of whiskey into an open jar of peanut butter. The result was a little bit shocking... and then it was intriguing… until it was just outright delicious! And so a new breed of whiskey was born.

Founded in 1824, Glenlivet Distillery is one of the truly great names in Scottish whisky. In this very special bottle, Master Distiller Alan Winchester, has combined aged oak casks and American first-fill oak casks, to create an exceptionally smooth single malt. To the nose there are delicate aromas of citrus fruit, and the palate is sweet, with notes of oranges and pears, and hints of toffee apples and candy. Drink it neat as an end of the night tipple, or match it with a grilled rib eye steak with a side of pumpkin mash, to make a meal even better.

A bottling that's a perfect introduction for those who are new to single malts, the Singlton of Dufftown Malt Master's Selection was created by The Singleton master of malts Craig Wilson. Matured in a combination of refill, Sherry and Bourbon casks, with a greater proportion of refill to allow ‘the sweet yet refined distillery character to shine through’. The whisky, bottled at 40% abv, promises a ‘slightly sweeter’ take on the classic Speyside style used by the Singleton of Dufftown 12 Year Old. It's full on fragrant fresh fruit, rich honey and mellow vanilla, followed by juicy pear, sweet spice and the tingling warmth of white pepper. The silky smooth Single Malt is made to be enjoyed.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. One of the six classic malts of Scotland, this Whisky is best enjoyed neat or with a slight dash of water.

Laphroaig, founded in 1815 by brothers Donald and Alexander Johnston, has an extremely rich history; neighbourly disputes with Lagavulin and many ownership changes to name a couple. The 10 Year Old Single Malt is Laphroaig's signature malt that is full sparkling gold in colour and has that signature rich smoke and seaweed character with a hint of sweetness. Surprisingly the palate is rich with subtle sweet hints and complex layers of salt and peatiness that evolve on the palate and continue to the long and dry finish.

Family owned and run for over 170 years, the Glenfarclas distillery has produced a slightly smoky, spicy Scotch with a rich long lasting finish. The 15 Year Old is golden amber in colour, the nose shows rich oak and a hint of peat smoke, with soft fruity characters. It is firm-bodied with a luscious glorious oaky finish, with a touch of smoke and sherry sweetness.

Matured for many years in traditional Whisky casks before being finished in sherry casks, this 12 year old single malt from Balvenie is rich and smooth. It's characterised by rich honey sweetness and a delicate layer of Sherry that lingers on the palate.
