Castello Di Ama Montebuoni
The delicious and elegantly structured Montebuoni, Chianti Classico Riserva is the result of grapes from the central-south-eastern slope of Chianti Classico, in the municipality of Gaiole in Chianti. Borne of rocky soils rich in limestone, the wine is a deep, dark, ruby colour and opens with fragrant flowers, dark fruits, eucalyptus and espresso perfume. The focused palate expresses raspberry, currant, a bright acidity, and supple fine-grained tannins rounded out with a savoury edge.
Castello Di Volpaia
Castello di Volpaia Chianti Classico DOCG The vineyards of Volpaia, located between 300 and 500 metres of elevation, are the highest in the Chianti region. This is one of the reasons why our Chianti Classico is renown for its elegance and freshness with a rich bouquet of red fruits and spices. The grapes are harvested by hand and collected in boxes holding less than 20Kgs of fruit. In the winery, they are destemmed and lightly pressed before fermentation commences use their own yeasts for two weeks. After this, the wines macerate for a further ten days on their own skins to give structure, complexity and colour to the wines prior to malolactic fermentation to knock the edges off. Ageing takes place in oak barrels for 14 months.
Casanova Di Neri Cerretalto
Cerretalto is a single vineyard Brunello from one of the very best sites in the region. The wine is made only in exceptional years when the quality of fruit warrants. The best fruit from the site is hand harvested, sorted, destemmed and crushed before undergoing wild yeast fermentation in open vats. The temperature controlled fermentation lasts 3-4 weeks and then the wine is transferred to oak barrels for 31 months followed by a further 30 months in bottle. The wine is kept back in the winery for 6 years before release.
