Shaw & Smith Lenswood Vineyard Chardonnay
A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

A meticulous and confidential selection of magnificent terroirs. A common denominator of these soils: Campanian chalk, declined according to different exposures and depths. The Chardonnays of Côte des Blancs provide the main support for this cuvée and ensure its great elegance. On this solid basis, the northern terroirs of the Montagne de Reims and the hills of Nogent l’Abbesse contribute liveliness, structure and complexity. It is the harmonious association of these great terroirs which allows this cuvée to express an astounding freshness and a maturity worthy of an Apanage. Reserve wines to accentuate the aromas. As throughout the Pommery range, the collection of Pommery reserve wines supports the assemblage in a good proportion and enhances the sensation of great maturity of this cuvée. A long ageing in our historical cellars: As every Apanage, a prolonged ageing in the cellars provides this cuvée with the elegance and complexity which characterize it. This is an indispensable stage and one has to be patient to have all the subtleties of this assemblage revealed. The aperitif will be a privileged moment to appreciate this wine but caviar or a carpaccio of scallops with green lemon will reveal other facets of this cuvee. Remarkable elegance, the first nose reveals a spring freshness. Subtle floral notes of jasmine and acacia are harmoniously paired with delicate grades of linden. After this first impression of an incredible freshness, a large complexity reveals itself during which notes of citrus fruits and a creamy impression of frangipane express themselves alternately. The attack is open, without detour, as a sign of a very great assemblage. The elegance and freshness revealed on the nose can be found on the palate. The heart of the tasting is of an exemplary righteousness. The aromas of citrus fruits and white fruits (fresh apple) take over. The balance of the final is perfectly revealing the subtle flavor of yellow grapefruit.

Domaine Jean Dauvissat Chablis 1er Cru Côtes de Léchet
Domaine Jean Dauvissat Père & Fils works 22 hectares of vineyard in Chablis across 7 communes with 53 separate parcels across Chablis and Chablis Premier Cru. Fabien took over from his father in 2009, following training in Beaune and Dijon concluding with a Masters on Bordeaux. The Domaine began with Fabien’s grandfather in La Chapelle-Vaupelteigne, but it was Fabien who took up where his grandfather left off in terms of bottling and labelling rather than selling off in bulk. Fabien’s approach is one of respect for the terroir, working each vineyard and parcel individually to express the differences from one site to another; and one of respect for the environment by restricting interventions wherever possible. Vinification is in temperature controlled stainless steel with the total maturation for the premier crus around two years. A young new Chablis producer to watch. Domaine Jean Dauvissat Pere & Fils are known to produce Chablis that are rich, with the perfect balance between minerality and fruit. Using no oak, the wines are aged for a considerable time in modern stainless steel tanks before being bottled, so they have time to develop. A classic Cote de Lechet, about as mineral as Chablis can be. This premier cru Cote de Lechet is a model of Left Bank precision, razor sharp, with juicy, mouth-watering acidity. A characteristic floral attack and gun-flint smokiness fill the mid-palate, and the finish is bright berry fruit and long, long minerality.
Domaine des Hâtes Pierrick Laroche Chablis 1er Cru Butteaux
Product Information: Butteaux is one of the ‘climats’ of Premier cru Montmains which is regarded as one of the top Premier cru vineyard sites in Chablis lying beside or below Vaillons. Being one of the most southern locations for 1er cru in Chablis it is regarded as a cooler site with slightly later harvest. Here there is a very thin layer of clay which overlays the Kimmeridgian marls. Maker: Pierrick Laroche, the proud owner of Domaine des Hâtes, continues the legacy of his family's estate located in the picturesque village of Maligny, in the north-west sector of Chablis. The name of Pierrick's Domaine, "hâtes" refers to an old agricultural unit of measure, similar to the English rod. It evokes the long and slender fields used for sowing, where the longer rows made plowing easier with fewer turns. The term "hâtes" was often used to describe such fields. Established by his father in the 1970s, Pierrick's family vineyard holdings have gradually expanded over time, resulting in the current size of around 33 hectares. After obtaining a degree in oenology from Beaune, Pierrick embarked on a journey to gain valuable experience by traveling the world and undertaking various internships. Armed with knowledge and a deep passion for winemaking, he returned home to take over the family vineyards and start producing his own wines. Philosophy: Pierrick's cellars, ingeniously built into the side of a hill in the village, allow for much of the winemaking process to be conducted by gravity ensuring gentle handling of the grapes. The vinification takes place traditionally in stainless steel tanks, while some of the Premier and Grand Cru wines undergo a small portion of aging in used barrels, allowing for a full malolactic fermentation. One of his oldest vineyard plots, Les Châtillons, planted in the early 1970s, sits just behind the hill of the Grand Crus and showcases the meticulous use of barrel aging, which adds complexity and depth to the cuvée. In 2016, Pierrick expanded his range by starting a small négoce operation, sourcing must from friends who predominantly farm on the left side of the river. This addition includes premier crus such as Beauroy, Beauregard and Vau de Vey, as well as the grand cru of Bougros. In 2019, Pierrick inherited 8 acres of vines from his father-in-law in the southern sector of Chablis, around the village of Courgis. This inheritance includes Petit Chablis, 5.5 acres of Chablis and just over half an acre of the premier cru Les Butteaux. Pierrick Laroche's dedication to his craft is evident in every bottle of wine he produces. With a perfect blend of tradition and innovation, his wines showcase the unique terroir of Chablis, captivating enthusiasts with their finesse, complexity and distinct character. As Pierrick continues to nurture and expand his vineyards, he upholds the family legacy while leaving his own mark on the world of Chablis winemaking. Nose - Direct, Oyster Shells, Green Apples Developing scents of Granny Smith apples and flint with time in the glass. Palate - Silken, Quince, Concentrated The medium-bodied palate delivers fine acidity that cuts through the rich citrus fruit, along with touches of white peach and a tang of quince. Finish - Light Spice, Persistent, Saline Lightly spiced and quite persistent toward the saline finish. Excellent. Butteaux is one of the ‘climats’ of Premier cru Montmains which is regarded as one of the top Premier cru vineyard sites in Chablis lying beside or below Vaillons. Being one of the most southern locations for 1er cru in Chablis it is regarded as a cooler site with slightly later harvest. Here there is a very thin layer of clay which overlays the Kimmeridgian marls. Nearly 3 hectares extra. This is the first part of Butteaux as you leave Chablis next to Forets… Younger vines planted by father-in-law after some court-noué and it seems to be returning – 12-15 hl/ha in 2022. All barrel elevage again. A more subtle nose – quite direct though. Really a panoramic width of flavour here – silken, a little more apparent concentration/generosity – large-scale wine. Gosset Grand Blanc de Blancs Non-Vintage
Product Information: This Champagne highlights the more mineral characters of the different Champagne varying terroirs. Dialling into the chalky minerality, the Chardonnays are selected from various crus - Avize, Chouilly, Cramant, Villers-Marmery, Trépail - where the chalk breaks through to the surface in the Montagne de Reims, Vallée de la Marne and the Côte des Blancs. Earthy mineral aromas, very refined, delicate and attractive overall, with aromas of white flowers, citrus and a trace of honey. Lovely tension! As crisp and lively as it gets. Bottled at the end of the spring following the harvest and with 4 years minimum ageing in the cellars. The dosage is a low 7g/l adjusted with precision to preserve the balance between freshness and fruit without masking the wine’s character and purity. Maker: The oldest Wine House in Champagne: Aÿ 1584 The history of the Gosset family goes back five centuries to Jean Gosset (1484-1556), “Lord of Aÿ and Mareuil”, who was the first official ancestor in the lineage. The origins of “Maison Gosset” itself date back to the year 1584 when Pierre Gosset, Lord and Alderman of Aÿ, decided to set up a négociant business. 16 generations, all of direct lineage, have continued to build upon his work in Aÿ-Champagne and ensured that Champagne Gosset’s savoir-faire, lives on. Towards the end of 1993, the Champagne Gosset became part of the family-owned Renaud-Cointreau group which has since made it its mission to preserve the Gosset style. In the late 20th century, Champagne Gosset’s association with the Cointreau family, as well as the birth of the Gosset Celebris vintage cuvées, propelled the Champagne House to be amongst the most prestigious Champagne Houses. The unique bottle Jean Gosset first used the antique bottle that would become the emblem of the Gosset Champagne House in 1760. This bottle is an exclusive model that used to be part of the family’s collection of ancestral bottles. It owes its name to the “antique glass” colour of the glass paste from which it is produced. This elegant bottle is bears a neck label known as the “necklace medallion” named after Albert Gosset (truly one of a kind in the Champagne region), is instantly recognisable. Philosophy: Gosset is dedicated to crafting wines with perfect balance between freshness and distinctive character. Each cuvée reflects the region’s diverse terroirs, sourced from 140 hectares of Champagne vineyards.
