The wines were in development for over two years and use the latest spinning cone technology, working at low temperatures to gently remove alcohol after the fermentation process, ensuring the wines maintain their delicate fruit flavours. The wines were created to maintain strong varietal characteristic, it added, containing no artificial sweeteners or additives.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. Toolangi is a state forest just outside Healesville that was devastated during Black Saturday. The excellent vineyards remain, and continue to produce wines of personality and place.
