Semillon

Mount Mary Triolet

The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

Evans & Tate Classic Margaret River Sem Sauv Blanc

Evans & Tate Semillon Sauvignon Blanc, clear pale lemon-green in colour with aroma of fresh cut grass, passion fruit with a hint of elderflower on the nose. Dry medium body and intensity of crisp green apple and ripe stone fruits with hints of green pepper on the palate. Great acidity structure with a medium to long finish. True to the classic.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The wine has won countless awards at the leading wine shows around the country and has a wonderful propensity to develop even further in the bottle. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Hints of vanilla bean and a refreshing acidity on the finish mean this decade old wine will continue to live in the cellar for many years more.
