The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

Fresh tropical and passionfruit aromas and flavours are well supported by a dry crisp, acid backbone.

Evans & Tate Semillon Sauvignon Blanc, clear pale lemon-green in colour with aroma of fresh cut grass, passion fruit with a hint of elderflower on the nose. Dry medium body and intensity of crisp green apple and ripe stone fruits with hints of green pepper on the palate. Great acidity structure with a medium to long finish. True to the classic.

Made in the classic Hunter Valley style, Hungerford Hill Semillon offers aromas of herbal, citrus and lemon. Wonderful line of acid and complexity running through the entire length of this wine.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. The Deep Woods Estate Hillside Semillon Sauvignon Blanc is a wine that can be enjoyed on release but will find further complexity over the next two to three years. The palate is clean and lively with tremendous depth of ripe stone-fruit and the aroma of nectarine, ripe citrus and white blossom.
