A wine with great drinkability. Food matches - Fresh seafood and light poultry. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River. Direct input from Forester`s viticulturist ensures well balanced canopies and crops are grown for the desired fresh fruit driven style. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Grapes were harvested at a lower baume to achieve the delicate style. Winemaking - Modern white wine making techniques are employed in the production of the Brut Cuvee, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. A long cool fermentation follows, allowing for the retention of the delicate fruit characters in the base wine.

With vineyards located in the picturesque Central Ranges in New South Wales, it's obvious to see where Rolling get its inspiration from. Estate grown and crafted, this Sauvignon Blanc Semillon exudes a passionfruit dominated aroma which is mirrored on the palate. Zesty notes come to the fore via Semillon which also helps give this crisp dry white its long, flavoursome finish.

Mount Pleasant Elizabeth continues to be an all time favourite of not only Semillon lovers, but affordable dry white lovers across the board. With it's golden hue with a green tinge and baked apple with hints of toastiness on the nose. Citrus flavours of lemon and lime and a buttery texture with good length and crispness on the finish. The important Sauternes property Chateau Suduiraut lies alongside Chateau dYquem and was ranked 1er Cru in the Bordeaux classification of 1855. Suduiraut can boast a history going back to 1580 although in 1992 it joined a family of properties, including Chateau Pichon Baron in Pauillac and Chateau Petit Village in Pomerol, owned by the French insurance giant AXA. Suduiraut, noted for its finesse and subtle complexity, is one of a small group of Sauternes producers which have emerged as worthy rivals to their famous neighbour. The 200ha property has 92ha under vine, mostly on gravel, sand and clay soils.
