The grapes used to craft The Katana Chardonnay were handpicked, chilled overnight, and whole bunch pressed. The juice was rough settled, and transferred to French oak barriques for fermentation. This process led to the creation of a pale straw coloured wine with golden yellow highlights along the edges. This wonderful Chardonnay presents a supple core of citrus blossom and white stone fruit characters, enhanced by mineral notes. The juicy palate contains flavours of bright fruits and French oak supported by crisp acidity, ending in a lively and captivating climax. This alluring white wine can be enjoyed within 5 years from vintage. Drink it with potato soup, roasted vegetable pizza, and chorizo and sweet potato risotto.

he Touriga from our own little vineyard is really hitting its stride now. This wine showcases the exotic and pure characteristics of this classic Portuguese variety. Enjoy flavours of ripe plum, cherry and chocolate alongside gentle acidity and soft tannins.

This wine is made with Pinot Noir fruit grown on some spectacular vineyard sites in the Yarra Valley, comprising predominantly MV6 clone, with some 114 and 115. Pacha Mama use minimal additives or fining and aim to let the fruit shine through rather than clobbering all over it with heavy oak use or commercial wine-making techniques. Flavours of sour cherry and wild strawberries carry on to the palate complexed by a savoury spice and intriguing earthiness that lingers long after the last mouthful.

Lifted fruit and florals. Violets, rose notes, baskets of fresh berries. Lithe layers underlie ample red fruit; pretty pink ladies, milk chocolate, and cherry wood flitter from the glass. These all follow through to the palate, true to the nose. Fleshy and lush all the way along. Lengthy rolling fruit and generous throughout.

Lark Hill have been the pioneers of this traditional Austrian variety. It was back in 2002 when Jancis Robinson visited the vineyards and stated that Lark Hill was the perfect place to grow Grüner Veltliner due to its overall terroir. With links to bio-dynaimc farming already being established, Chris Carpenter thought it was the obvious connection to begin making Grüner. Wonderfully fragrant with more than a hint of spice, Lark Hill's Grüner has a lovely textural component to it as well making it an ideal match white fish, shell fish and subtle charcuterie.
