Established in 1998, Shadowfax is a boutique winery located just 30 minutes from Melbourne in the heart of Werribee Park. The winery takes its name from J.R.R. Tolkien's classic, The Lord of the Rings, where Shadowfax was chief among horses. Shadowfax Wines is a premium winery with vineyards located in some of the most unique and sought-after regions in Australia. The Little Hampton single vineyard site near Trentham sits at 730m above sea level, making it one of the coolest in the Macedon Ranges. The deep red volcanic loams over hard basalt outcrops give Little Hampton a unique balance between aromatics and power, producing exceptional fruit, particularly Pinot Noir, which forms the flagship Little Hampton Pinot Noir. Other vineyards include Straws Lane, planted in the 1980s to Pinot Noir and Gewurztraminer near Hesket, Midhill, with slightly acidic and well-drained red volcanic soils and Werribee, which produces powerful and robust K Road Shiraz and unadulterated Minnow wines. The Pyrenees vineyard produces Shiraz with natural spicy aromas, a full palate and long fine tannins, thanks to the inland location at the foothills of the Pyrenees Mountain range. Shadowfax Wines' commitment to minimal intervention in the winery and precision farming results in wines that are vibrant, pure and drinkable. The Shadowfax Geelong Pinot Gris 2022 is a delightful wine that showcases a light white straw color with a green hue and brilliant clarity. The aroma is complex, with nectarine and lychee fruits complemented by nori and mineral flint. There is a focus and depth to the nose, with barrel-derived complexities and floral notes complementing the more primary fruit aromas. On the palate, nectarine and apricot immediately wash across, with papaya, ginger and fresh florals adding length and lusciousness. The palate is generous, but the healthy acidity maintains vitality and zest, with a touch of saltiness on the finish. This is a great example of maritime Pinot Gris. This wine pairs well with salmon and cream cheese bagel, nori roll and three cheese souffle. The viticulture of this wine involved a wet winter and cool spring in Geelong, setting up the growing season. Small crops fully ripened with a warm summer while retaining good acidity. The winemaking process involved firmly whole bunch pressing the hand-harvested fruit to release the full Pinot Gris flavor profile. Natural fermentation occurred in older French barrels, with the wine left to unwind and age slowly on its ferment lees to add generosity.

The scent of red fruits such as raspberry and pomegranate very ripes are well blended with spicy and balsamic notes. The particular mineral component of the Bussias terroir gives the wine a great structure, an intense color, clear and enveloping tannins. There is a long and consistent aftertaste. Intense garnet red. Nebbiolo Founded by Luigi Einaudi, during his time as Governor of Banca dItalia and President of Italy after the second world war, it is said he never missed a harvest! His son Roberto succeeded him, but it was Robertos daughter Paola, on her return from Milano to Dogliani at the end of the 1980s, who with tenacity, enthusiasm and significant investment, re-launched this historic brand and went about improving wine quality. Today it is her son, fourth generation Matteo Sardagna, who is at the helm. Long sojourns in the Langhe as a child with his grandfather and mother left Matteo with a deeply-rooted passion for the familys values and customs. Today the winery is equipped with unique cement egg-like fermenting tanks, and botti of varying sizes and age so that Matteo and his team can produce wines which reflect their terroir, and the traditional style of the region and the estate.

The fall of communism in Hungary saw many new beginnings, and one of note for wine lovers was the formation of The Royal Tokaji Company by wine-writer Hugh Johnson, and a consortium of foreign investors with the sole vision of revitalising the magnificent sweet wines of Hungary. The Royal Tokaji Company today is a benchmark for the noble wines of the region, from their 3 Puttonyos wines at around 60-90 grams per litre of residual sugar through to the intense Essencia at 450-850 grams, they are wines that offer the drinker a unique insight to one of the great wine styles of the world. In truly exceptional years Royal Tokaji selects the finest berries from its finest vineyards and carefully produces a few barrels of Single Vineyard Aszú. 2017 was such a year, just the eighth this century, showing exceptional richness, structure and backbone balanced by lively acidity - a truly volcanic vintage. Summer was hot, so we began the Aszú berry harvest in early September and continued to pick steadily in the ideal autumn weather. In particular October provided three textbook weeks for fine quality Aszú, with day after day of early morning mists, afternoon sunshine and drying winds. The Aszú wines show great structure, plenty of botrytis, depth and freshness with excellent complexity, all attributes of long ageing potential. The excellent Aszú berries with good structure and perfect botrytis were macerated in fermenting must for two days. After pressing and finishing fermentation in barrel the wines were filled into Hungarian oak casks in our extensive, deep underground cellars to mature for over two years. The final blends were carefully crafted in the spring of 2020. Bottled at 203.3 grams of residual sugar per litre. Nyulászó (meaning “a good place to catch hares”) is a celebrated First Growth vineyard overlooking the village of Mád. Its volcanic bedrock is overlaid with rich, brown clay interspersed with lighter rhyolite tuff, consistently producing racy, perfumed, elegant wines with a steely backbone. This wine is lively and elegant, highly perfumed on the nose with ripe peach and apricot on the palate balanced by silky acidity. The finish is long and incredibly complex.

Berton Vineyard had a humble start in 1996, but through the years set its own imprint in the Australian wine scene. Emphasizing more on the "beauty of simplicity" , like The Berton Vineyard Metal labels, we have great examples of single varietal wines attributing the classic characteristics of single varietal wines with a delicate twist. The Berton Vineyard Cabernet Sauvignon from the Metal Labels collection is deep in colour and violet hues, intense aromas of red berry fruits, sweet blueberry jam and a gentle touch of vanilla delivers from the oak treatment. On the palate, subtle fine tannins blend gracefully with the distinct flavours black currant, smoky liquorice and well-integrated oak.

Bollinger Special Cuvée is unquestionably one of the finest of all French champagnes, the Bollinger style is distinctive for its full-bodied toasty character derived from a high proportion of Pinot Noir and the inclusion of base wine that has been matured in oak.

Colour is deep red. The nose shows aniseed, tar, FruChocs and spicy oak. The fine palate entry has mulberry, cranberry, aniseed and liquorice flowing delicately with Rhone-like spicy, chewy, savoury tannins.

Clonakilla Shiraz Viognier began its life after a career defining trip to the Côte-Rôtie in the mid 90s which set Tim Kirk on the journey towards producing one of Australia's best Shiraz. Determined to show that Australia could produce elegant but still powerful Shiraz, Tim's work has paid off with his flagship being acclaimed worldwide. In only 15 years, the Shiraz Viognier has attained 'Exceptional' status with Langton's, the highest possible.

Henschke Mount Edelstone is one of the most important single vineyard sites in Australia. The 90 year old vines has been producing a single vineyard Shiraz since 1952 and is one of Australia's truly great wines. The nose has sweet ripe plum and blueberry aromas and the palate is intense and deeply flavoured. While enjoyable upon release, this is a wine that will enjoy a decade or more in the cellar.

You are greeted on the nose with suggestions of bramble and spice, gradually opening up to reveal red and black berry fruits, spice, leather and subtle floral notes.The palate is soft and supple, with cranberries and sweet red berry fruits upon entry. Fine silky tannins entwine a concentrated core of juicy black cherries, dark berry fruits, dried herbs and cocoa before trailing off to a long even finish.

Founded by Steve Planthaber, originally from Adelaide but post school left for the South Island of New Zealand. A move to Marlborough with his partner Kirsty Sutherland cemented his love for all things wine. Hard not to be inspired when meeting the Sutherland’s who were one of the pioneers of viticulture in the region, part of the original success of Cloudy Bay followed by establishing their own estate Dog Point. Steve was keen to find his own path and after 12 years running the production and operations at Cloudy Bay decided to begin his own wine brand, Settlement. Settlement, named after the stunning Amphitheatre single vineyard site in the Omaka Valley, is dedicated entirely to the production of organic, old vine single vineyard expressions of very special sites in Marlborough. Doesn’t get any more Southern Valley than this site, right in the Omaka Valley. High density of clay in this soil, lots of very good Pinot Noir sites in this sub-region. The Settlement Vineyard is the youngest of the 4 sites, planted in 2009 but a beautiful amphitheater, steep hillside vineyard, 4000 vines per hectare so high density plantings. North/North West facing. Hand picked/sorted, 70% destemmed/30% wholebunch. Short pre soak then wild fermented in tank, Pressed to barrel then aged for 18 months in French oak, 35% new. Francois Freres and Mercurey Oak. Complex, youthful, pure and fresh. Aromas and flavours of dark red cherry and fruit spices, there’s mineral rock and stone quality, plum and black currant. Delicious on the poalate, but still very youthful, a taut texture driven my tannins and acidity, but cushioned by a core of fruit that collectively will see this wine age well. Dry and lengthy on the finish with flavours that mirror the bouquet. Best drink from 2024 through 2034. Excellent. - Cameron Douglas MW, 94 Points
