The winemaking for this complex wine from Romagna follows the traditional method with a long maceration on the skin, daily pump over and 2 delestages (racking). Part of the grapes are harvested late and the vinification takes place separately. The wine is then aged in big French oak casks. It's a complex and intense wine with a ruby red colour. Cherry and violet notes on the nose are enriched by plum, berries and licorice scents, thanks to the partial drying process at the vines. The palate is full, round, spicy and persistent with sweet tannins. Try this with typical regional recipes, such as handmade pasta with meat sauce, roasts, grills and aged cheeses.

The Brunello di Montalcino Riserva is a deep and vibrant ruby red with aromas of dried red fruits and dried wild herbs. The palate experience is intense with a complex weave of red fruit and spice, a little strawberry and aniseed jam. The palate doesn’t let up for a long time and it’s structural, with the acidity and tannins pointing to a long and steady future. Made with 100% Sangiovese (selected from their oldest vines and only in the best years), the juice is allowed to macerate on skins for 30-35 days and fermented at a controlled temperature followed by spontaneous MLF (malolactic fermentation), both stages in cone-shaped Slavonian oak casks. The wine is then racked off into 10 to 25 hectolitre Slavonian oak casks for a period of around 40 months prior to being bottle-aged for at least 15 months. Since 1912 the Osborn family have tended vineyards in McLaren Vale, South Australia. Small batches of grapes undergo 10 days of carbonic maceration, then are gently crushed and immediately drained to finish fermentation in stainless steel. Stranded starfish have no place to hide. Santa Margherita Chianti Classico hails from the historic Tuscan region of Chianti; the spiritual home of Sangiovese. This exciting Sangio has an intense ruby red colour with faintly garnet tones. The initial aromatic sensations are sweetish and vanilla-like, typical of wines matured in barriques. The clean, ethereal bouquet then highlights Sangioveses spicy notes. On the palate we again find very well integrated oak which soon gives way to hints of wild berry fruit preserve and to that nuance of spices we perceived on the nose.

Given the evocative name of 'La Bise', the warm southerly breeze that wanders across the vineyards of Burgundy a few weeks before harvest are said to give the vineyards the 'kiss of life'. Natasha Mooney has hand selected vineyards for the La Bise label which have been given the kiss of life. The case in point is this remarkable Sangiovese that is sourced from two northern vineyards in the Adelaide Hills and two different Sangiovese clones that blend big round berries with cherry driven fruit flavours and the smaller, more concentrated berries that give the wine an aniseed and blackcurrant accent. A wine with great texture and mouthfeel that has density while maintaining its lifted fruit aromas.
