The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. This aroma really revs me up, it continues to evolve as time goes by. This wine is alive! Complexity, poise, sinewy acid, fine tannins wrapped around a sleek core of pristine dark fruit. Seppelt Chalambar is sourced from fruit from a number of premier Victorian wine regions allowing the expert winemaking team to source the very best fruit year in, year out. In recent years the Chalambar has achieved wide acclaim for not only its approachability upon release, but its inherent ability to age superbly for such an affordable wine. Notes of black fruits, pepper and a delicate angle of spice that grows even more complexity through the length of flavour. Yarra Yering is not only a Victorian icon, but a true Australian wine treasure. The Underhill Shiraz is sourced exclusively from the 1974 planted block of Shiraz at the western-most extremity of the vineyard. Drawn from soils with a higher clay base which has resulted in a wine of a more masculine bent offering darker fruits and spice with chewier tannins and a savoury undertone.
