Determined to show that Australia could produce elegant but still powerful Shiraz, Tim's work has paid off with his flagship being acclaimed worldwide. Paringa Estate Peninsula Shiraz Mornington Peninsula The Paringa wines in the Peninsula range are an haut Mornington Peninsulathe emphasis being on the liveliness of the fruit. 'The quality of these wines are often equal to many other vineyards best'- James Halliday This is a classic cool-climate Shiraz. The fruit is sourced from three sites around the Peninsula which has the spice and black pepper characters, that are characteristic of this wine. The wine has a dollop of Viognier (5% approx.) which is co-fermented with the Shiraz. It is then aged for close to a year in seasoned French oak barriques. Shop Paringa

Torbrecks flagship wine, The Laird Shiraz is only produced in exceptional years. The fruit comes from one of the finest Shiraz sites in the Barossa valley; the dry grown Gnadenfrei vineyard dating from 1958. Matured for 36 months in special French barriques coopered by Dominique Laurent, the Laird is the ultimate expression of ultra-concentrated single vineyard Barossa Shiraz.

The utterly sublime and exhilarating Langi Shiraz is typified by ethereal blackberry/ brambly/ dark cherry/ pepper/ violet aromas and flavours, supple textures, mid-palate buoyancy and underlying savoury oak. The grapes come from the "Langi Shiraz" block planted with "Swiss Clone material originally sourced from nearby Best's Concongella Vineyard. The granitic soils and cold south-westerlies are influential in producing its distinctive flavour profile. Meticulous attention to detail are behind the winemaking. After a cold soak the fruit (some whole bunch) is open-fermented with regular hand plunging. Some components complete fermentation in barrel. The wine is aged for around 14 months in new (45%) and seasoned French oak.

The Torbreck Descendant has a powerful nose of blackberry and tar complemented by floral lavender and a violet lift. Full-bodied and concentrated with ripe silky tannins and plenty of extract this wine has a great future ahead.

Colour is deep red. The nose shows aniseed, tar, FruChocs and spicy oak. The fine palate entry has mulberry, cranberry, aniseed and liquorice flowing delicately with Rhone-like spicy, chewy, savoury tannins.

Yarra Yering is not only a Victorian icon, but a true Australian wine treasure. The Underhill Shiraz is sourced exclusively from the 1974 planted block of Shiraz at the western-most extremity of the vineyard. Drawn from soils with a higher clay base which has resulted in a wine of a more masculine bent offering darker fruits and spice with chewier tannins and a savoury undertone.

This Two Hands Shiraz is full bodied but very buoyant. Bright flavours are lifted and accented by notes of fresh blue and blackberry with hints of plum. Creamy complexity through the palate adds depth and interesting texture. Palate has great depth and a coating nature but doesnt feel heavy. Tannins start mid-palate and leave a lovely rolling chewy nature. Spicy through the finish with vanilla and sweet baking spices.

Bekkers Syrah Grenache McLaren Vale The Syrah is sourced from red clay-loam over siltstone rock in Clarendon (which they now own) and Grenache from sand over orange sandy-clay in the much vaunted Blewitt Springs. Picked by hand, vinified with 15-30% whole bunches and cold soaked for 5-6 days before natural fermentation and basket pressed to aged French oak 500L puncheons. Deep inky purple with a nose of lavender, violets, blueberry, blackberry, Indian spices and a palate of leafy blackcurrant and a long, soft, silky texture.
