The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before entering the casks for ageing. Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years.
