Mount Mary Chardonnay
At Mount Mary they aim to make a Chardonnay of great length that is able to reach a balance between complexity & finesse. Unashamedly Burgundian in concept, local Yarra Valley practices are employed to fully express the unique terroir, including the wine not going through Malolactic fermentation as Mount Mary's cool-climate leaves the fruit with ideal acidity when picked. Matured in 20% new French barriques with the remainder in older barrels and large casks and along with grape solids, this is a Chardonnay of impressive texture and complexity.

Domaine Moreau-Naudet Chablis 1er Cru Beauregard
The Domaine Moreau-Naudet Chablis 1er Cru 'Beauregard' showcases a unique, elevated slice of Chablis, shaped by the cooler, higher-altitude slopes of Les Beauregards on Chablis' Left Bank. Virginie Moreau now leads the charge in this premier cru site, drawing on vines replanted in 2001 with rare massal selections, now hitting their prime at 20 years old. The result is a deeply mineral and intensely flavoured wine, balancing orchard fruits and floral notes with a wet-stone minerality. Crafted with traditional, organic methods—hand-harvested, whole berry pressed, naturally fermented, and aged slowly in large oak—this Chablis is textured, refreshing, and faithful to the classic shape and style of the finest Chablis.
Les Jardins de Babylone Jurançon Moelleux
Made in tiny quantities from ridiculously low yields of Petit Manseng, this offers all the purity and precision of Dagueneau’s greatest wines. Dider Dagueneau loved the wines of J. J. Prüm, and you can think of this as a Prüm-styled Jurançon (such is the purity and electric intensity!). The pricing reflects the costs of making the wine (via berry-by-berry selection, even though no botrytis is involved). To arrive at this price per bottle, the claim is that the project's costs are simply totalled and then divided by the number of bottles made. Sounds logical enough! The low yields and warmth of the site mean Les Jardins de Babylone can be picked in late October, a whole month before the grapes for conventional Jurançon Moelleux are typically picked. Even so, the wine usually ends up with approximately 130 g/L residual sugar, perfectly balanced by tangy, mouthwatering acidity to give a wine with fabulous verve and drive. As alluded to above, this wine is Germanic in style, so it isn’t only a dessert wine, but can also be drunk throughout the meal (the way you might consume a German Auslese) or with cheese. Of course, it can work brilliantly with carefully matched desserts (ideally citrus- or apple-based).
