Two-time Gold-winning La Cuadrilla de Sobreño hails from Spain’s Toro – a region that’s been making wine for centuries but has only recently started getting recognition for its juicy, fruit-packed red wines. The region sits northwest of Madrid in Castilla y León, where winters are bitterly cold and summers scorchingly hot. Wines here used to be very high in alcohol (up to 16%), but producers now pick earlier to craft delicious, balanced, fruit-driven styles. This great-value red comes from Bodegas Sobreño, a family-owned cellar founded in the 1990s. Winemaker Oscar Martín leads the charge and has a cabinet full of awards to show for it. It’s made from Tinto del Toro – a local strain of Tempranillo with thicker skins that shrug off the summer heat. Expect generous black and cherry fruit in a hearty red that’s spot-on with comfort dishes – think shepherd’s pie or sausage and mash.

Jean-Marc Sauboua first made this unique wine for the team at a special Castillon cellar – as a treat to enjoy after late-night working. All the best 'off cuts' that any discerning butcher (or in this case, winemaker) would keep back for his own dinner, hence the wine's name. They made the mistake of showing it off and the secret was out. La Part du Boucher comprises small amounts of wine left at the end of bottling, carefully blended, then stashed away for a while in barrel. It’s a magnificent blend – we couldn't tell you exactly what, but a little Pomerol, Pauillac perhaps and Saint Emilion rubbing shoulders with other stars from the southwest. What we can tell you is that it's a big, warming red. Decant and serve in large-bowled glasses.

The aroma is rich with flavours of ripe blackcurrant and savoury herbs. The flavour shows spice and vanilla oak with a smooth structure and silky finish. Related to the Cabernet Franc and Sauvignon Blanc grape varieties, Cabernet Sauvignon grapes have a thick skin making them higher in tannins than varieties such as Pinot Noir. This grape is popular due to its ability to be grown in a range of soils and climates from Australia and abroad such as Coonawarra, Margaret River, France and Chile. As a result, Cabernet Sauvignon is a full bodied wine with flavours of blackberry, currant and cinnamon. It pairs well hearty red meats, winter stews and even rich chocolate desserts.
