What kind of winemaker ages their red wine 200 metres underground in a river running through a vast chasm beneath the mountains of Carcassonne? Sylvain Delabre does – and the result is wowing staff and customers alike. Chasm de Cabrespine 2019 is a bold, spiced Minervois made from handpicked parcels of Syrah and Grenache. First aged in clay amphorae for deep, brooding flavour. Then bottles are left to rest in the most perfect ageing conditions imaginable. No light, perfect humidity and pressure. We call it extreme cellaring. It took four hours to retrieve a single bottle for tasting. But what emerged was something extraordinary: a rich, spiced southern French red with six years maturity delivering lovely spice and a long complex finish

Vale Perdido
Our range of Portuguese wines is unparalleld and has helped put dramatically raise the popularity of this great wine producing country. Vale Perdido ws one of the very first in that range, from the Grand family estate, Casa Santos Lima, The lost valley – Vale Perdido – is part of José Oliveira da Silva’s estate in the beautiful, centuries-old wine country north of Lisbon. It is a fabulous fourth-generation winery, one with the Midas touch too. It has won well over 1,000 medals – of which over 500 have been Gold. This 2022 vintage is tasting as delicious as ever., with lots of lovely ripe blackberry and raspberry fruit, and cinnamon and chocolate notes too. A subtle lick of oak adds to a satisfyingly long finish.

Mirlo Merlot
Hailing from Cariñena, neighbour to Rioja, in northeast Spain, picked at peak of ripeness, it's bursting with silky ripe cherry and summer berry fruit. One of the oldest wine regions of Spain, Cariñena lies just southeast of Rioja, a land of ancient low-yield vines. Most of its vineyards nurture native varieties Garnacha, but this red shows its winemakers can excel equally well with international stars, including Merlot. This grape ripens to perfection in the arid rocky soils and hot sunshine. Mirlo Merlot is a smooth, full-of-fruit red for easy sipping. Served at a cool room temperature, it's a great party wine, and tasty with chicken, veggie kebabs or frittata.
