The wine is made possible thanks to Rae Clark, a proud vigneron who has been working in the wine industry for around 30 years. She is a passionate advocate for improving biodiversity through sustainable vineyard practices in her home region of Coonawarra. And when it came to finding the best selection of Sauvignon Blanc for this new wine, the winemakers knew instantly to reach out to Rae. Aromas of passionfruit, pineapple and other tropical delights leap from the glass, backed up by a palate of spritely guava and gooseberry with a lively citrus finish.

When Belgian entrepreneurs Christopher Heirwegh and Christel Weemaes moved to Barcelona over a decade ago, they had one simple dream: to grow, harvest and bottle the best cava in the world! Having achieved that, they’ve added a few more great sparklers to their range and now created the fabulous Hola Spritz in its striking bottle. The grapes may be Chardonnay and Macabeo, like a cava, but carefully blended with citrus fruits and steeped with local mountain herbs, it’s more reminiscent of famous Aperol, conveniently with the fizz already added. At 8.5% alc and with a lovely kick of orange, it’s a refreshing aperitivo por excelencia. Crisp, bright with classic bitter-sweetness, it’s ideal served with a twist of orange. Chill and sip away.

Elegant (and utterly delicious) White Burgundy from a fine family domaine, established in 1909 by Joseph Matrot, and today run by the third generation, Elsa and Adèle Matrot. They are renowned as “a top-class Meursault producer” (Wine International), while Neal Martin wrote, "great wines are being made at this address". The sisters, like their father before them, believe in using oak sparingly in order to express “the quintessence of terroir” (La Revue du Vin de France). They let the fruit do the talking. The result is a portfolio of Burgundies that are intensely flavoured, pure tasting, with excellent ageing potential. In 2023, they discarded 25% of their grapes which has taken quality even higher. Certainly one of the finest producers of Burgundy.

RedHeads Grüner Veltliner

Grüner Veltliner (Gru-We or groovy) from RedHeads and the sustainable winery in the heart of the Barossa where wines are made. RedHeads has always been a bit of a rebel! The ‘movement’ started in 2002 in the McLaren Vale – in a cellar where young winemakers could come in their spare time and make just the sort of small-scale wine they dreamed of (not like they did in their day job). Since then, the winery has moved home a few times, and today make their wines in the Barossa, at one of Australia's leading eco-friendly cellars. There, surrounded by many of Australia's biggest wine names, they handcraft revolutionary wines from top batches of grapes, rescued from under the noses of the big players.
