Château l'Eglise-Clinet Pomerol

Château l'Eglise-Clinet is a much sought after Domaine within the right bank district of Bordeaux and can be hard to come by. A majority blend of Merlot to Cabernet delivers a wine of subtlety and plushness and due to the properties long planted vines, the ageability is second to none in the region. After not pulling out vines after the 1956 frost, this Château can boast some of the oldest vine material in Pomerol and that evidence can be found in the 2003 bottle of l'Eglise-Clinet which is still ageing gracefully in the bottle even after a difficult vintage due to heat.

Hidden Ridge Cabernet Shiraz Merlot displays aromas of plum, dark cherry and raspberry. These dark berry fruit flavours surround the palate with subtle oak notes and leave a long, generous finish.

Chateau Pavie Aromes de Pavie St Emilion

The Arômes de Pavie 2021 is the 2nd wine from Chateau Pavie and is a blend of 50% Merlot and 50% Cabernet Franc. It matures in French oak barrels, 70% of which are new French oak. In the glass the wine is a deep purple-black color. Still closed in its early years, but with some waltzing comes the lush scents of stewed black plums, black cherry compote and red and black currants. The wine further has aromas of tar, baked herbs and charcoal. On the palate, the Aromes de Pavie is full body wrapped in layers of black fruit, framed by soft tannins and tons of freshness and finishes long and earthy.

Chateau Phelan-Segur St-Estephe

Plenty of cabernet character with currant and blackberry and some fresh-herb undertones. Medium body. Fine, firm tannins. Refined and together. Oyster shell and hints of spices such as cloves and white pepper. Tapenade. Typical for the appellation. 75% cabernet sauvignon, 4% petit verdot and 21% merlot.

La Part du Boucher

Jean-Marc Sauboua first made this unique wine for the team at a special Castillon cellar – as a treat to enjoy after late-night working. All the best 'off cuts' that any discerning butcher (or in this case, winemaker) would keep back for his own dinner, hence the wine's name. They made the mistake of showing it off and the secret was out. La Part du Boucher comprises small amounts of wine left at the end of bottling, carefully blended, then stashed away for a while in barrel. It’s a magnificent blend – we couldn't tell you exactly what, but a little Pomerol, Pauillac perhaps and Saint Emilion rubbing shoulders with other stars from the southwest. What we can tell you is that it's a big, warming red. Decant and serve in large-bowled glasses.

Riposte Epee Pinot Noir

2023 PINOT NOIR THE WINE Seductive black cherry overlaid with exotic spices lead to a palate of supple fresh berries, bright acidity and lingering fine grained tannin. The very essence of youthful, vibrant Adelaide Hills Pinot Noir from carefully selected vineyards. VITICULTURE With enough sunny days to develop ripe, intense flavours 2023 was a cool and late vintage. The 2023 Epee Pinot Noir is made up of four clones - MV6,777,114 and 115 from vineyards at Gumeracha and Lobethal. More clones equals more complexity. WINEMAKING Harvested in the cool of night and early morning, pristine destemmed fruit is tipped directly into fermenters without crushing to give a high percentage of whole berries. The fermenters are gently pumped over twice a day to keep the skins wet and promote gentle tannin extraction. After pressing the wine is kept in stainless steel tanks prior to blending to preserve freshness and vibrancy.
